It's easier not to bake sourdough bread. You'll see what it looks like on the inside in a moment.
All you need is 500 grams of flour. You can use wheat flour, wheat flour, you can also mix the
types of flour. I have type 550 wheat flour here. I add two teaspoons of salt,
mix it up and add 310 milliliters of water to my flour. The water is rather cold.
I let it mix a bit and then I take my sourdough. I mixed it up.
How it works, I'll link it to you up here on the right in the video. I mix it up and
just leave it in the fridge. If I need it, I'll get it out and take
something from it. I just did that. Here are 40 grams of sourdough. As I said, I didn't
do anything before. I just took it out of the fridge and then out of the glass.
I add the removed amount of sourdough again and then it goes back into the fridge
until I need it the next time. This is what my dough looks like now. The consistency is not too
dry and not too soft. I cover that up and leave it at room temperature for about five hours.
I let my dough rest. Then we need a
baking dish. I sprinkled it with flour. If you don't have a baking dish, you can simply use a normal baking dish.
Now a little flour comes to the worktop and I put the dough on it. Look, it
went up really nicely. Do you see the bubbles? I now simply form the dough into a ball.
It is so tender and soft. Look how nice I can pull it apart.
Now I take my geerkörbchen and put the dough with the smooth side down.
I sprinkle a little more flour on top. I now cover that up and leave the dough overnight,
so that I can bake the bread directly in the morning. If you don't have that much time,
you can also leave the dough for five hours. So it should stand for at least that long and
then you can bake it too. My dough has risen really nicely again in the geerkörbchen.
I'm sprinkling a little more flour on it now. A little more flour on a
piece of baking paper and now I turn it over. Perfect. So quickly get the pot out.
It's damn hot. I preheated the pot to 220 degrees top and bottom heat.
Now I put the bread in there. Fold the paper a little to the outside, put the lid back on and
now I bake the bread at 220 degrees top and bottom heat for 40 minutes. After 35 minutes I remove
the lid. Wow, that looks great. And the baking paper and now I bake the bread without a lid for
ten minutes. My first sourdough bread without yeast. I cut it again,
I didn't even show that. In any case, very crispy, very crispy. Yes, that turned out
super nice. Nice and soft, but still juicy. I think it looks really great.
A little too much flour, maybe. I like it a lot. Yes, super nice and soft, so really great,
nice and crispy. My first sourdough bread without yeast. I think it turned out really
good. If you have any questions, write me in the comments. I'll link
the recipe for the sourdough at the end of the video, how you can easily
mix it and how you can easily process it. And I'll see you next time.
