
「素食」夏天吃真的太上头了!川味藤椒钵钵菜|【Vegan】Sichuan Bowl Bowl Chicken, But Vegetables
When I was in university, there was a restaurant selling Bowl Bowl Chicken nearby. As a Sichuan-Chongqing native, I really like to eat Bowl Bowl Chicken. There are generally two flavors: red chili oil flavor and green peppercorn flavor.
Red chili oil is toward the spicy side while the green peppercorn flavor gives you numbness, but toward the refreshing side.
Now, it's the season of peppercorns, and I want to make a vegetarian version of bowl bowl dishes. The seasoning is very simple, and there is no need to prepare the stock, and it's just as delicious as it looks.
以前读大学的时候,校门口有家卖钵钵鸡的,作为川渝人真的特别喜欢吃,钵钵鸡口味一般有两种,红油味和藤椒味,一种味道偏辣一点,另一种藤椒味重在提鲜花椒的麻香,相对更清爽一些,正好最近上市好多花椒,想着做个素食的家庭版的钵钵菜,调料都很简单,也不用熬鸡高汤,但是味道一样好吃。
Ingredients/材料:
Lotus root slices, potato slices, vegetarian tripe (konjac products), vegetarian omasum (konjac products), blacker mushroom, dougan, tofu skin, broccoli, oyster mushrooms, shiitake mushrooms, celtuce, Seaweed (you can add your favorite vegetables at will)
藕片、土豆片、素毛肚(魔芋制品)、素百叶、木耳、豆干、豆腐皮、西蓝花、秀珍菇、香菇、莴笋头、海带(可随意添加自己爱吃的菜)
调味料/Seasoning:
1L water, 5 tablespoons of fresh green peppercorn oil (adjust the amount to your liking ), green and red tabasco pepper (adjust the amount to your liking), 180ml of rapeseed oil, 8g of minced ginger, 1 teaspoon of sesame paste, 1 tablespoon of peanut butter, 1.5g of thirteen spices(or Five Spices), 1 tablespoon of sea salt (15g), 1 tablespoon of sesame oil, 1 tablespoon of vegetarian oyster sauce, 2 teaspoons of sugar, 1 teaspoon of matsutake powder, 20g of cooked sesame
饮用水1L、鲜藤椒油5大匙(若是市售的成品需要减少用量)、青红小米辣适量(不能吃辣可以加二荆条)、菜籽油180ml、姜末8g、芝麻酱1小勺、花生酱1大勺、十三香1.5g、海盐1大勺(15g)、香油1大勺、素蚝油1大勺、糖2小勺、松茸粉1小勺、熟芝麻20g
