冬至怎么能离开饺子呢,今天我用天贝做了饺子馅料,天贝蛋白质丰富,可以代替肉类补充蛋白,与没有膳食纤维的肉类相比,天贝中含有的膳食纤维达到28%,能促进消化,改善肠胃功能。
Winter Solstice is here! In my childhood, we ate dumplings on this day. So I made a dumpling kimchi hotpot with tempeh as the dumpling's stuffing.
对了,今天上早市买到鲜美的油菜苔,我特别爱吃油菜苔,用来只做馅料真的好极了,大家也可以用上海青或是包菜代替。
I bought some fresh choy sum this morning. It's one of my favorite vegetables, and it's very nice as the dumpling stuffing. If you can't find choy sum, you can use cabbage or bok choy instead.

Ingredients/材料:
天贝 180g(或者用油豆腐、腐竹豆干之类的代替)180g Tempeh (You can use tofu, yuba, or tofu products instead )
胡萝卜 半根 Half Carrot
油菜苔或者包菜 一把 A Handful of Choy Sum
香菇 3朵 3 Shiitake Mushrooms
生姜 8g Ginger
腰果粉 一大匙 1Tbsp Cashew Powder

调味料/Seasoning:
香油 一大匙 1 Tbsp Sesame Oil
生抽 一大匙 1 Tbsp Light Soy Sauce
赤砂糖 两小匙 2 Tsp Brown Sugar
岩盐 ½小匙 1/2 Tsp Rock Salt
白胡椒粉 ½小匙 1/2 Tsp White Pepper Powder

锅底/Hotpot:
纯素辣白菜 Vegan Kimchi
鸡枞菌 Termite Mushroom
生姜片 Sliced Ginger
藕片 Sliced Lotus Roots

调味料/Seasonings:
生抽 两小匙 1Tsp Light Soy Sauce
赤砂糖 两小匙 2Tsp Brown Sugar
韩式辣酱 两小匙 2Tsp Gochujang
