Southeast Asian cuisine is perfect for those hot summer days when you have no appetite. Even when I don't feel like eating, I can still enjoy a hearty meal. I especially love using Thai basil — it's a fantastic herb that can help boost your appetite in the summer. I used it along with edamame to make a vegetarian version of Thai basil fried rice. Edamame is a delicious summer bean, high in protein, making it a great substitute for meat. And don't forget to try this water spinach with a Tom Yum twist. It will surprise you. Paired with the Thai basil fried rice, it feels like you're dining at a Thai restaurant.
三伏天没食欲时真的特别适合东南亚料理,没胃口也能大快朵颐,我特别喜欢九层塔这种香料,夏季适当食用可以增进食欲,我用它搭配毛豆制作了素食版的打抛饭,毛豆是夏季特别鲜美的豆类,蛋白质也高,很适合代替肉类,对了!还要试试这道冬阴功风味的空心菜,吃腻了清炒空心菜无意间换了个口味竟特别惊喜,搭配打抛饭感觉瞬间到了泰国餐厅呢。
Ingredients/食材:
老豆腐 250g Extra Firm Tofu
九层塔或者打抛叶 1把 One handful of Thai Basil or Holy Basil
茄子(中等大小) 1根 One Eggplant
毛豆 1小把 One Handful of Edamame
蟹味菇 1小把 Shimeji Mushrooms
美人椒 4根 Four Mild Red Chili Peppers
小米辣 1个 One Tabasco Pepper
生姜 5g Ginger
青柠 适量 Lime to Taste
调味料/Seasonings:
红糖 1小勺 1 Tsp Brown Sugar
古法酱油 1.5大勺 1.5 Tbsp Soy Sauce
素蚝油 1小勺 1Tsp Vegan Oyster Sauce
清水 80ml Water
玉米淀粉 1/2小勺 1/2 Tsp Cornstarch
