松茸在中国更有菌中之王的美称,其独特的香气令人着迷,我很喜欢用松茸做炖饭,将香气与米粒充分融合,入口的一瞬间你会感觉松茸香气充斥整个口腔,那感觉像是置身于深山雨林,徜徉其中……

📒蔬菜高汤/Vegetable Broth:
卷心菜心 半个 Half Cabbage
小番茄 3个 3 Cherry Tomatoes
1个胡萝卜皮(边角料) Skin from One Carrot
西芹 1小段(30g)One Celery Stick
月桂叶 1片 One Bay Leaf
生姜 6g(拍散)Ginger
干香菇 1朵 One Dried Mushroom
海盐 ½小匙 1/2 Tsp Sea Salt
矿泉水 1L Water
(加水小火煮40-60分钟,煮完后500ml/ cook for 40mins to one hour, and you will get approx. 500ml vegetable broth)

📒食材/Ingredients:
有机大米 100g Organic Rice
云南松茸 120g(实在没有用新鲜香菇也好吃)Matsutake (Fresh Shiitake mushroom as alternative)
茭白 1棵 One Jiaobai
胡萝卜 60g Carrot
小油菜 4片 4 Pieces Bok Choy

📒调味料/Seasonings:
白葡萄酒 100ml White Wine
杏仁奶 150ml Almond Milk
干百里香1/2小匙 1/2 Dried Thyme
腰果芝士 适量 Cashew Cheese
黑胡椒 适量 Black Pepper
海盐 适量 Sea Salt

📒Tips:

1.500ml vegetable broth is just right for 100g rice
高汤500ml刚好能做100g大米的量

2.being patient, make sure to keep stirring, otherwise, the rice will stick to the pan
这道料理需要耐心,一定要不停搅拌,不然米粒会粘锅导致受热不均

3.The total cook time will be 25~30 mins, if you like rice al-dente, keep it at 25mins mark. if you like it to be soft, cook for 5 more minutes.
时间大概25-30分钟,25分钟会有带点硬心有嚼劲,喜欢稍微软可以30分钟,虽然有点麻烦,但当你吃到的那一刻会觉得一切都是值得的!
