
「素食」我的炒面精髓可都在这了!卷心菜炒面 |【Vegan】Cabbage Noodles Stir Fry
I used a special kind of cabbage in this dish. The cabbage leaves are slightly thick than the normal cabbage you can get in grocery store. It works well to stir fry. I really like to put it in the noodles stir fry, yummy!
最近的牛心白相对于卷心菜会更好吃一些,两者都属于结球甘蓝,其实味道上来说没有太大的差别,牛心白叶片相对来说要厚一点,用来炒食也非常好,我很喜欢用包菜炒面,脆脆的包菜配上弹牙的面条每次都能吃掉一大盘儿!
Ingredients/食材:
牛心白 2大片 Two Pieces of Cabbage Leaves
豆芽 1把 One Handful of Bean Sprouts
胡萝卜 半根 Half Carrot
香菇 2朵 Two Shiitake Mushroom
香菜 适量 Some Coriander
酸萝卜 小块(可选) Pickled Radish (Optional)
花椒 8颗 Eight Sichuan Peppercorns
小米辣 2个 Two Tabasco Pepper
调味料/Seasonings:
胡椒粉 1/4小勺 1/4 Tsp White Pepper Powder
孜然粉1/2小勺 1/2 Tsp Cumin Powder
生抽 1大勺 1 Tbsp Soy Sauce
素蚝油 1小勺 2 Tsp Vegan Oyster Sauce
清水 1大勺 1 Tbsp Water
老抽 1小勺 1 Tsp Dark Soy Sauce
香油 1小勺 2 Tsp Sesame Oil
盐巴 少量 Salt
Tips:
The noodles must be taken out half way cooked since they have to be fried later and will not taste good if they are soft.
面条一定要夹生就取出来,因为后面还要煎炒,煮软了就不好吃了
