Christmas is around the corner. Today I made a gingerbread cookie. My Taobao store just launched two new nut butters. In this episode, I used cashew butter to replace butter, and I used oatmeal instead of flour for a healthier choice. The cookies is crispy and rich, and it also has a distinctive smell. This gingerbread can be paired with afternoon tea or eat at breakfast.
The most important thing is it's fun to make the gingerbread.
马上就圣诞节了,今天做了个姜饼人曲奇饼干,特别适合和小朋友一起完成的甜点,最近店里上新了两款坚果酱,我用腰果酱代替了黄油部分,成品也非常香酥浓郁,面粉也使用了燕麦片代替,吃起来会更健康无负担,用来当做下午茶或者早餐都是可行的,最主要是过程会很好玩儿

食材/Ingredients:
燕麦片 50g Oatmeal
枫糖浆 30g maple Syrup
纯腰果酱 80g Pure Cashew Butter
生姜汁10g Ginger Juice(或姜蓉4g or 4g Ginger Paste)
姜黄粉 2g Turmeric Powder
肉桂粉 1.5g(可选) 1.5g Cinnamon Powder (Optional)
肉豆蔻粉 1g(可选) 1g Nutmeg Powder (Optional)
香草精 1/2小勺(可选) Vanilla extract (Optional)

糖霜部分/Frosting Part:
鹰嘴豆罐头 1个 One Canned Chickpeas
糖粉 35-50g Powdered Sugar

步骤/Steps:
1.碗里加入腰果酱和其他除燕麦片以外的所有食材混合均匀。
Add all ingredients and cashew butter except oatmeal to a bowl and mix well.
2.将燕麦片加入破壁机打成粉末,不需要特别细腻
Add the oatmeal to the blender and beat into crushes. It does not need to be powder fine.
3.将步骤1和2混合揉成团,期间如果沾手可以再加入少量燕麦粉
Mix step 1 and step 2, and them knead into a dough. Add a small amount of oat flour if needed.
4.放在硅油纸上按扁,用擀面杖擀成4厘米厚的薄片,然后用姜饼人模具框出姜饼人雏形
4. Place it on the baking paper and flatten it. Using a rolling pin to roll it into a 4 cm thick sheet, and then use a mold to cut the gingerbread.
5.将鹰嘴豆罐头的水过滤在锅中煮浓缩到原来的一半,倒入打蛋盆中用打蛋器高速搅打,成型后不断加入糖粉,直到略微硬性发泡就可以了,蛋白霜放入裱花袋即可勾勒姜饼人五官
Filter the liquid from canned chickpeas and boil it in a pot until it is concentrated to half of its original volume. Pour it into a mixing and whip it at high speed, and add powdered sugar until it forms slightly hard foam. Put the aquafaba into a piping bag to dress the gingerbread
6.烤箱160度预热好,送入后烘烤18分钟左右即可
Preheat the oven to 160 degrees Celsius and bake for about 18 minutes

Tips:
1.不喜欢燕麦粉也可以用低筋面粉代替,口感会更细腻,由于吸水量不同,需要酌情调整糖浆用量,也可以加一点干的椰子花糖控制水分
If you don’t like oat flour, you can use cake flour instead. The taste will be more delicate. Due to the different water absorption, you need to adjust the amount of syrup while making the dough. You can also add a little dry coconut sugar to control the moisture.
2.烘烤时间不用太长,否则会太硬
The baking time has to be short, otherwise gingerbread will be hard to eat.
3.剩下的蛋白霜可以用裱花嘴挤出花型,烤箱烘烤制作成蛋白霜糖
The remaining aquafaba can be extruded into flower shapes with a piping tip and baked in the oven to make a aquafaba candy.
