「素食」春天的野菜之王：荠菜菌菇水晶蒸饺 |【Vegan】Steamed Crystal Dumplings with Mushrooms and Vegetables

Shepherd's purse is definitely the king of wild vegetables in spring, at least for me. I am obsessed with its aroma. Yesterday I went back to the village to pick a big bag of wild shepherd's purse. In previous years, we used flour to make shepherd's purse dumplings or wontons. This time, I want to try something new and make a steamed crystal dumpling. The shepherd's purse stuffing is mixed with mushrooms. King oyster mushrooms are added to increase the texture and umami. There is nothing more delicious than this in spring!

对于我来说春天的野菜之王——荠菜当属其一，我很迷恋它特殊的香气，这不，昨天回村子里去采摘了一大包野生荠菜，吃荠菜自然享受，沐浴阳光埋头挖荠菜又何尝不是呢！往年都是用面粉做荠菜饺子或是馄饨，索性今天来个新鲜感，做一道水晶蒸饺，荠菜馅与野菌融合一下，加上杏鲍菇增加口感和鲜味，春天的美味莫过于此！

水晶皮Crystal Wrapper：
土豆淀粉 100g Potato Starch
小麦淀粉 50g Wheat Starch
开水 150g Boiling Water
盐巴 1g Salt

食材/Ingredients：
荠菜 2大把 Two Large Handful of Shepherd's Purse
杏鲍菇 1根 One Piece of King Oyster Mushroom
云南混合干野菌或干香菇 20g Mixed Dried Mushrooms
老豆腐 150g Firm Tofu

调味料/Seasonings：
五香粉 1/4小勺 1/4 Tsp Five Spice Powder
胡椒粉 1/2小勺 1/2 Tsp White Pepper
香油 1大勺 1 Tbsp Sesame Oil
盐巴 适量 Salt
泡菌菇的水 150ml Water that Soaked Muahrooms
水淀粉 适量 Starch Slurry

蘸水/Dipping Sauce：
香醋 1大勺 1 Tbsp Black Vinegar
生抽 1大勺 1 Tbsp Soy Sauce
香菜 2大勺 2 Tbsp Corianders
香油 2小勺 2 Tsp Sesame Oil

Tips：
1. If you want the dumpling wrappers to be more transparent, you must pour boiling water quickly while stirring. It is recommended to place the mixing bowl next to the kettle and pour the water in immediately after it boils.想要皮更透明一定要滚烫的开水迅速边倒边搅，建议和面盆放在烧水壶旁边，水沸腾后立马倒入
2.Potato starch will produce the most transparent result. Please do not use other kinds of starch instead. Adding wheat starch will make the dumpling wrapper more elastic.
我试过土豆淀粉是最透明的，请勿用其他淀粉代替，加入小麦淀粉成品会更Q弹
