Fall is here, and it's the perfect season to enjoy delicious mushrooms, especially matsutake. With their rich aroma and incredible flavor, matsutake mushrooms are ideal for making a simple matsutake rice dish. You don't need to add any complex seasonings— just let the fragrance of the mushrooms infuse the rice and enjoy the taste of autumn. Although fall has officially begun, the lingering heat in the dog days of summer still makes us crave refreshing dishes. A sour wild mushroom and tofu soup fits perfectly, especially when paired with Guizhou-style dipping sauce. It’s simply delightful!
秋天又到了菌子鲜美的时候了,尤其是松茸,香气浓郁鲜美极了,很适合用来做一锅松茸焖饭,不用加复杂的调料,让松茸的香气渗透到米粒中,感受秋天的气息,虽已立秋,但三伏天秋老虎还是不肯松手,天气热胃口需要打开,再做一锅野菌酸汤豆花正适宜,搭配贵州蘸水真的太惬意了!
Ingredients/食材:
汤底/For the Soup Base:
番茄1个 1 tomato
土豆 1个 1 potato
贵州红酸汤 适量 A suitable amount of Guizhou red sour soup
黄豆芽 1把 A handful of soybean sprouts
高汤或水 1.5L of broth or water
生抽 1大勺 1 tablespoon soy sauce
胡椒粉 1小勺 1 teaspoon ground pepper
盐巴 1小勺 1 teaspoon salt
赤砂糖 1/2小勺 1/2 teaspoon brown sugar
木姜子油 1小勺 1 teaspoon Litsea peppercorn oil
食材/Ingredients:
豆花或豆腐 Tofu pudding or tofu
海鲜菇 Beech mushrooms
野生松茸 Wild matsutake mushrooms
金针菇 Enoki mushrooms
香菇 Shiitake mushrooms
木耳 Wood ear mushrooms
丝瓜 Loofah gourd
蘸水/Dipping Sauce::
折耳根 2大勺 2 tablespoons Zhe'ergen (fish mint)
香菜 2大勺 2 tablespoons cilantro
贵州蘸料 2小勺 2 teaspoons Guizhou dipping sauce
糊辣椒油 1大勺 1 tablespoon chili oil
生抽 1小勺 1 teaspoon soy sauce
盐巴 1/2小勺 1/2 teaspoon salt
原汤 3大勺 3 tablespoons soup broth
松茸焖饭/Matsutake Rice:
野生松茸(5-7cm) 5个 5 wild matsutake mushrooms (5-7cm each)
大米 2杯 2 cups of rice
胡萝卜 半根 Half a carrot
昆布或海带 4*10cm(浸泡一夜)4x10 cm piece of kombu or seaweed (soaked overnight)
盐巴 适量 Salt to taste
