The creator demonstrates how to season the fish with a variety of blends, prepare a hearty vegetable and rice mixture in the oven, and finish the dish with a creamy Hollandaise sauce for a flavorful, restaurant-quality meal.
Today, we're gonna be using tilapia.
We're gonna be using a Southwest tilapia with wild rice.
So let's stay tuned and let's do this.
Okay, we already have our tilapia prepared.
Now we need to season them up.
So I'm gonna put it on just a regular old paper plate
or any kind of plate that you have at home.
I like to do paper plates because fish leaves stains
and it makes it smell.
I know you're gonna wash your plate, but still, yeah,
I just like to throw them away
and I don't have to worry about it.
Okay, the first thing we're gonna do
is some dried granulated sweet red peppers.
It's like a just dry season, it's really good.
Oh my God, I went and got some of this
and it's really brightens up what I'm about to make.
So I'm just gonna sprinkle.
I'm gonna do all these fish, but I'm just gonna do one
and then I'm gonna show you all how to do it
and I'm gonna go ahead and do the other ones.
So I'm gonna add that on there,
which that is gonna be delicious.
Okay, I've got my special blend.
Be sure to season seasoning blend.
You can go to besuretocook.com.
You can get that on our website
or you can also go to Amazon.
Go to Amazon and you can also find it.
Make sure you look for the logo with the two spoons.
Be sure to season, seasoning blend.
You wanna get that.
Okay, we're gonna sprinkle a little bit of this on it.
Now, this is gonna take this fish
to a whole different level.
On both sides, guys, I'm talking about
a whole different level.
There we go.
We're gonna rub that in really good on both sides.
Then we got a little bit of this Southwest seasonings
because we gotta have it Southwest.
It's a little bit of spicy in here,
but that's okay.
We're only gonna do a little bit on each side.
Just a little bit.
That's why I got in a little bit of,
you know, a little bowl here
so I can just sprinkle it with my hands
because we don't wanna do too much.
Okay, I've got a wonderful sauce
that's gonna go on this whole dish at the end.
It's gonna go on top of the fish.
So we're gonna hit it with a little bit of lemon pepper.
You can get a little bit of, I like lemon pepper,
but I need a little bit of lemon pepper
to get a little bit of kick to it.
And you want a little bit of on there.
And that's all we're doing like that, guys.
We're gonna do all our fish like that
and we're gonna wrap them up
with them sitting in the refrigerator
until we make the rest of the stuff.
And then I'm gonna show you
what we're gonna do with this wonderful fish.
Okay, in a pan, I'm gonna add about two
to three tablespoons of olive oil.
Okay, I'm gonna start off with my green pepper.
And I want these diced in a small dice.
We're gonna start off with the red bell pepper after that.
These are also diced.
Then we're gonna add in our diced onion.
These are also gonna be diced.
Okay, that's about 1 3rd cup to each one,
1 3rd cup onion to a partial 1 3rd cup
of both of the peppers.
We're gonna add in two garlic cloves,
nicely minced, really good.
Or if you don't have the garlic cloves,
you can get an already chopped garlic.
Just get about a tablespoon of chopped garlic.
It'll be the same.
And then we're gonna go ahead
and we're gonna mix all this together
and we're gonna steam all these vegetables.
Okay, now I got a can of fire roasted tomatoes
that I've drained.
Some of them are still gonna be undrained.
So you just wanna make sure you don't get
note in the juice in them.
Whatever you can.
You wanna, see that juice still in there?
Cause it's set in a bowl.
So I'm just gonna go ahead
and try to get as much as I can without the juice.
Okay, I got a can of black seasoned beans.
Okay, I've got,
I'm gonna be using two packs of this long grain rice.
So I'm gonna go ahead
and throw this rice right on in here.
Great, cause this is gonna swell up guys.
And I'm gonna do my other.
That's two, two boxes of rice,
but you can use one and you can do this dish in half.
Okay, you need one and two third cups of liquid
to the box of the rice.
But since I'm doing two,
I've got double that.
I'm gonna pour that in there.
So that's over three,
almost close to three cups of liquid.
And you gotta watch out guys,
because go by what it says.
I'll go over a little bit
because some boxes tell you to go do it their way
when you do it,
it doesn't come out right.
So I go just a little bit more over.
Okay, the seasoned pack that comes with it,
I added a little chicken broth to that.
And I'm gonna,
I stirred it all up
and I'm gonna add it in here to give it more flavor.
Then I'm gonna add a cup of corn,
softened butter,
raw kernel corn in there.
And then what I did is I put it in my fridge.
I got to do frozen corn.
Just wanna add that corn in there.
It's gonna make it look so good.
It's gonna be tasting really good.
I'm gonna make sure this mix,
we're gonna pour it into a glass,
we're gonna put this in the oven.
I'm just gonna spread it out.
But I'd rather for you to do it in the oven.
Let it,
the oven's been preheated to 350 degrees.
We're gonna put this in the oven
and we're gonna cook this rice
until it's almost done
and the water's almost off of it.
And then we're gonna lay our fish on here
and we're gonna finish cooking it.
Okay, so we're gonna dump this into a pan,
all of it.
And that's our rice and everything.
I know it looks weird
that I'm dumping it from one pan to another,
but that's okay.
You don't have to do it like I did.
You could have do it a different way.
And you wanna make sure this gets stirred up
really nice and even.
Okay, I'm gonna pop this in the oven.
Let's give it at least 35 minutes
and we'll come back to look at it.
This should be done.
Okay, I have cooked this until there was no liquid in here.
And this is nice and settled.
And I'm sitting here.
I'm not letting it cool.
It's still hot and warm.
I put my fish in.
Usually if it's almost done,
it's got a little juice still and needs to cook down,
you can put your fish on top and let it finish cooking.
But I'm letting mine do.
I did it separately so I can add the fish on top
and I'm gonna add a great sauce on top of the fish.
But this is a great way to make this dish.
So right now this is still blazing hot.
We're gonna sit this inside.
We're gonna take about five,
about 10 or 15 minutes for our fish and you'll see.
Let's make the sauce.
Okay, I've got a strip of aluminum foil
on a big, nice sheet pan that I softened my butter.
I put it in the microwave if it's not
and get it nice and soft and I spread it around.
And usually if you want to,
before you do that, you can take your fish
and you can season it just like I did.
It's already been seasoned.
I don't need to put anything on it.
And I'm gonna lay this fish right on down
on this buttered pan and we're gonna cook this fish.
We're gonna put some more butter on top of it.
So I'm just gonna lay it right down
on a big old piece of aluminum foil.
I'm hoping I can get all of these fish.
I've got about five of them.
Yeah, it looks like I got five.
Great.
Okay, then I'm gonna add some small pieces of butter
on top of my fish with the season on there
because it's already been melted.
So I just take my hand and kind of like just a little,
have little drips of droplets on there.
350 degrees inside of the oven for about 10 to 15 minutes.
But look at it, 15 minutes might be a little too long.
So just be looking at it, you know, every couple seconds.
Keep an eye on it.
You want it nice, moist and soft and not dried out.
And I'm gonna put my fish on top of my wonderful rice.
Okay, then this is a quick and easy.
Get some North Hollandaise sauce.
And then you just wanna kind of drizzle
all that over the fish and make it look,
appearance, it looks so good.
And then this is a wonderful dish that you can present this
with any family member, friends, loved one,
or just a romantic dinner with you and your hubby.
So that's my lovely fish.
Let's get in here and see what all the excitement is.
And you got a little bit of everything.
Look at that, tomatoes,
all that great stuff coming at you, look at that.
That is delicious, delicious dish for everyone to enjoy.
Let's taste it.
Oh my God, that is so good.
It's so flavorful.
Oh, when you get this fish, it's gonna be delicious.
I'm gonna sneak me a little piece of this fish.
Gonna add me a little bit more
