
Campfire Chicken in the Oven | Easy One-Pan Dinner

Make this delicious Campfire Chicken right in your oven! This easy one-pan dinner is made with a whole seasoned chicken, potatoes, carrots, onions, and corn, all oven-roasted together for a hearty family meal.

📝 INGREDIENTS

• 1 whole chicken
• Sunburst blend mini/baby potatoes
• 1 bag baby carrots
• 4 corn on the cobs, cut in half
• ½ yellow sweet onion, cut into petals
• 1 can fire-roasted garlic tomatoes, drained
• 3 cloves fresh garlic, sliced
• Fresh thyme
• Rosemary
• Celery seed
• About 1 teaspoon parsley
• Lemon zest
• Sea salt
• Medium-cracked black pepper
• Chicken seasoning
• BeSureTo Season Seasoning Blend
• Olive oil
• ½ cup white cooking wine
• 1 cup low-sodium chicken broth
Optional Gravy:
• Cornstarch
• Pan juices

👨🍳 INSTRUCTIONS
━━━━━━━━━━━━━━━━━━━━━━━━━━━━━━
1. Preheat the oven to 350°F.
2. Drain the fire-roasted garlic tomatoes and set
them aside.
3. Slice the garlic cloves. Cut the corn cobs in
half to make smaller pieces.
4. Season the corn with BeSureTo Season
Seasoning Blend and set aside.
5. Cut ½ of a yellow sweet onion into large
petals.
6. Add the baby potatoes, baby carrots, onion
petals, sliced garlic, fresh thyme, rosemary,
celery seed, and parsley to a large oven-safe
roasting pot.
7. Add a little fresh lemon zest and the drained
fire-roasted tomatoes. Mix the vegetables and
seasonings together.
8. Pat the whole chicken dry. Season it with sea
salt, rosemary, cracked black pepper, chicken
seasoning, and a drizzle of olive oil.
9. Place the seasoned chicken on top of the
vegetables. Add the remaining garlic.
10. Pour ½ cup white cooking wine and 1 cup
chicken broth into the pot.
11. Place the chicken in the 350°F oven. Cook
for about 1 hour, checking it after the first
30 minutes since oven temperatures can vary.
12. Around halfway through cooking, add the
seasoned corn around the chicken and baste
the chicken with the juices from the pan.
13. Return to the oven and continue cooking for
approximately 20–25 minutes, or until the
chicken is completely cooked through.
14. Remove from the oven and allow the chicken
to rest before serving.
15. Serve the chicken with the potatoes, carrots,
corn, onions, tomatoes, and flavorful pan
juices.
OPTIONAL GRAVY:
Remove some of the pan juices. Mix a little
cornstarch with some of the juice until smooth,
then combine and heat on the stove until
thickened into a gravy.
