Steve's Authentic Key Lime Pie is a Red Hook institution that the
owner, Miami native, Steve Tarpon, started over 30 years ago in 1994.
So when he came here, he started looking for a real key lime pie
the way he remembers, and he couldn't find any.
So he started baking his own.
And everyone in the neighborhood knows Steve's wife
and pie shop manager Victoria.
People like it. They taste the pie.
They get addicted. We bake the pie from scratch.
That includes baking their own graham crackers
to then crumble to turn into the crust.
There's five ingredients.
The condensed milk, the key lime juice, egg yolks, graham crackers,
and butter. That's, yeah, that's fine.
And we use real juice. Fresh, squeezed.
Key lime juice. So this is a key lime tree,
and we have the little key limes, and there will be more.
The key lime, it's a little smaller.
The flavor is, I would say, more concentrated. It's more tart.
And at the same time, it's sweeter.
In the bakery, they can make up to 1,200 mini pies in a day,
and they serve them right through the shop's front window.
We don't have a big menu. It's just three sizes of pies.
You make one thing, a really good one, you focus.
To Steve, it has to be the best, the best.
We don't lower the standards for the pie.
Best butter, the best flour, and of course the juice.
It has to be fresh juice.
I'm inviting everybody to Red Hook.
Please come by, visit us, have a look at the pier.
You can see the Statue of Liberty.
Sunsets are divine here.
Come for the pie, stay for the view.
We're highlighting the people making, creating,
and building something special right here at home.
Join us for Made in the Tri-State tonight at 8 p.m.
