Prepare your red jalapeños. Slice off the stems and scoop out the seeds. Reserve up to a loose tablespoon of the seeds, depending on how spicy you want it. Press all your garlic cloves with a flat knife and peel off the skins.
Place jalapeños, garlic, reserved seeds, water and vinegar into blender and pulse until smooth. Pour into large pot and add sugar.
Bring to a boil over medium heat and skim off any scum that rises to the top. Cook until you have a little more than 1 cup of liquid about 10 minutes, stirring constantly. Season to taste with salt and MSG. Pulse in a blender once again until it’s smooth.
Pour into a jar or squirt bottle and allow to rest in the fridge for at least one day so flavors blend. Then you can serve it like you would Sriracha, with eggs, potatoes or noodles. Keep refrigerated.
