What you Need:

For honeycomb:
1 cup water
3/4 cup sugar
1/4 cup honey
1 tsp baking soda

For poached fruit:
3/4 cup sugar
1/4 cup honey
2 TBL lemon juice
3 cups sparkling apple juice
1 cup water
Pinch of salt
2 peaches
4 apricots

Fresh berries, sliced pineapple, mint and ice cream to serve

For the poached fruit: Slice a small “x” into the top and bottom of your peaches and apricots.

In a medium saucepan, add sugar, lemon juice, ginger ale and water. Bring to a boil. Turn it down to a simmer and add your apricots and peaches. Keep the fruit submerged with a small lid. Cover and cook for 6 minutes. Remove apricots to a clean bowl and cook the peaches another 6 minutes or until fruit barely yields to a knife. Place fruit in a clean bowl and allow to come to room temp. Place in the fridge to cool completely.

Return syrup to heat and cook until you’re left with about 1 cup of liquid. Place in a squirt bottle and keep in the fridge.

For honeycomb: Line a small baking sheet with a silicone mat or buttered parchment paper. Set aside. In a medium saucepan place sugar, honey and water. Bring to a boil and then cook on medium heat. Cook until the syrup registers 300 on a thermometer. Turn off the heat and carefully whisk in baking soda. Pour into prepared baking sheet and allow to cool completely. Once cool, break into large chunks.

To assemble: Peel and slice poached peaches. Peel apricots. Arrange on plate with fresh pineapple and berries. Stack a few pieces of honeycomb alongside fruit. Drizzle on reserved poaching syrup and garnish with ice cream and mint.
