📋 INGREDIENTS:
— For the Fries:
• 2–3 large sweet potatoes (cut into fries)
• 1 tsp olive oil
• Salt (to taste)
• Vegetable oil for frying
• Optional: corn starch for added crisp

— For the Glaze:
• 1/3 cup brown sugar
• 1 tsp butter
• Juice of 1/2 orange
• 1 tsp lemon juice
• 1 tsp apple juice (optional but enhances flavor)
• 1/2 tsp corn starch (to thicken)
• 1–2 shakes each: ground cinnamon, nutmeg, allspice

👩‍🍳 INSTRUCTIONS:
1️⃣ **Cut the Sweet Potatoes**
Use a sharp knife to cut sweet potatoes into even fries. (Be careful!)

2️⃣ **Bake First**
Lightly toss the fries in olive oil and salt. Place them on a tray sprayed with cooking spray, spread out evenly.
Bake at 400°F for 25–35 minutes until fork-tender.

3️⃣ **Cool Down**
Let the fries cool down completely. Then dust lightly with corn starch to help them crisp up when fried. Shake off excess.

4️⃣ **Fry the Fries**
Heat oil to 350°F and fry the cooled fries in batches for 2–4 minutes until golden and crispy. Drain on paper towels.

5️⃣ **Make the Brown Sugar Glaze**
In a saucepan, melt butter. Stir in brown sugar, orange juice, lemon juice, apple juice, and spices.
Whisk over medium heat until it bubbles. Add corn starch to thicken. Let it simmer for 1–2 minutes until glossy.

6️⃣ **Serve & Dip**
Pour glaze into a small dish. It should be thick like ketchup once cooled. Dip those crispy fries or drizzle it on top.
