干辣椒 2个 Two Dried Chilies
小米辣 2个 Two Tabasco pepper
大红袍 15粒 Fifteen Red Sichuan Peppercorns
生抽 4大勺 4 Tbsp Soy Sauce
清水 3大勺 3 Tbsp Water
盐 适量 Salt
凉拌黄瓜脆豆腐/Cucumber & Crispy Tofu:
青皮黄瓜 250g Cucumber
鲜木耳 6朵 Six Woodear Mushrooms
脆豆腐或腐竹 100g Crispy Tofu or Fuzhu (Beancurd Sticks)
胡萝卜 1/3根 1/3 Carrot
调味料/Seasonings:
花椒面 1小勺 1 Tsp Sichuan Peppercorn Powder
紫苏 2片 Two Pieces of Perilla
辣椒油 2小勺 1 Tsp Chili Oil
生抽 1大勺 2 Tbsp Soy Sauce
盐巴 1/2小勺 1/2 Tsp Salt
香油 1小勺 1 Tsp Sesame Oil
捞汁秋葵/Okra in Sauce:
秋葵 10个 Ten Okras
金针菇 1小把 One Handful of Enoki Mushroom
调味料/Seasonings:
生抽 2大勺 2 Tbsp Soy Sauce
米醋 1小勺 1 Tsp Rice Vinegar
青芥末 2g Wasabi
生抽 1大勺 1 Tbsp Soy Sauce
小米辣 1个 One Tabasco Pepper
熟芝麻 1小勺 1 Tsp Cooker Sesame
凉拌花生米/Peanut Salad:
有机花生米 200g Organic Peanuts
芹菜 60g Celery
胡萝卜 1/3根 1/3 Carrot
八角 1.5个 One and Half Star Anise
小茴香 1小勺 1 Tsp Cumin
大红袍 20粒 Twenty Red Sichuan Peppercorns
桂皮 1小片 One Small Piece of Cinnamon
香叶 2片 Two Bay Leaves
调味料/Seasonings:
姜末 1大勺 1 Tbsp Minced Ginger
小米辣 2个 2 Tabasco Peppers
花椒 15粒 Fifiteen Sichuan Peppercorns
生抽 1大勺 1 Tbsp Soy Sauce
米醋 2小勺 2 Tsp Rice Vinegar
香油 1小勺 1Tsp Sesame Oil
花椒油 1小勺 1Tsp Sichuan Peppercorn Oil
赤砂糖 1小勺 1 Tsp Brown Sugar
