MAITAKE is a mushroom originally from Japan. It has a refreshing fragrance. The nutrition and taste surpass the shiitake mushroom.
Ingredients/材料:
灰树花炊饭/Maitake Pot Rice:
灰树花 适量(可用香菇代替) Some Maitake Mushroom (You can use Shiitake mushroom if maitake is not available)
大米 一杯 1 Cup Rice
糯米 ¼杯 1/4 Cup Glutinous Rice
红藜 20g Red Quinoa
蚕豆 70g Broad Beans
调味料/Seasoning:
味淋 一大匙 1Tbsp Mirin
酱油 一大匙 1 Tbsp Soy Sauce
日式昆布高汤 Japanese Style Kombu Broth
芦蒿豆皮卷 Artemisia Selengensis Tofu Roll
油豆皮 几张 A few Sheets of Tofu Skin
芦蒿 100g Artemisia Selengensis (Asparagus might be an alternative)
舞茸 50g Maitake
球生菜 适量 Some Lettuce
调味料/Seasoning:
黄豆酱 一小匙 1Tsp Soybean Paste
生抽 一小匙 1 Tsp Soy Sauce
胡椒粉 ¼小匙 1/4 Tsp Pepper
冬寒菜汤 Curly Mallow Soup:
冬寒菜 Curly Mallow
金针菇 Enoki Mushroom
舞茸 Maitake
第二遍淘米水 Starch Water from the Washing Rice
海盐 Sea Salt
