I turned leftover rice and some vegetables into tomato& mushroom risotto, with vegan cheese.
一人食难免会有剩下的边角料食材和剩米饭,如何处理他们更好呢?很简单好吃的方式就是把它们切碎做成一碗焗饭。

Ingredients/材料:
大番茄 1个 1 Big Tomato
小番茄 10个 10 Small Tomatoes
杂粮饭 1碗(最好隔夜偏硬的米饭哦)Whole Grain Rice (Preferably, leftover rice )
蘑菇 3个 3 Mushroom
胡萝卜 60g Carrot
毛豆 40g Edamame
玉米 30g Corn
迷迭香 1根 One Rosemary
腰果芝士 Vegan Cashew Cheese

📒调味料/Seasonings:
咖喱粉 2小匙 2 Tsp Curry Powder
黑胡椒和海盐 适量 Black Pepper and Salt
赤砂糖 1/2小匙 1/2 Tsp Brown Sugar
纯番茄酱(无糖)2大匙 2 Tbsp Tomatoes Paste
韩式辣酱 2小匙 2 Tsp Gochujang (Korean Chili Paste)
燕麦奶适量 Oat Milk
欧芹碎适量 Parsley
