
「素食」懒人绝不揉面!做法简单又美味的佛卡夏面包!|【Vegan】Fool Proof Focaccia
Focaccia is really a very simple bread to make. The dough has a high water content. It is definitely not possible to knead the dough, so I mixed all the ingredients one day in advance and let it ferment in the refrigerator. After 10-15 hours of slow fermentation, gluten formed naturally. The bread has a chewy texture.
佛卡夏真的是非常简单的一款面包,这是一个含水量很高的面团做法,自己揉面肯定不行,我会头一天把它把所有食材放在保鲜盒混合,让它在冰箱慢慢发酵,经过 10 -15 个小时面筋也会自然形成,完全不需要揉面面包也能有均匀的气孔,成品口感也很有嚼劲。
Ingredients/材料:
高筋面粉 300g Bread Flour
全麦面粉 50g Whole Wheat Flour
海盐 2g Salt
干酵母 3g Dry Yeast
橄榄油 10g Olive Oil
枫糖浆 15g Maple Syrup
清水 300g Water
辅料/Toppings:
樱桃番茄 适量 Cheery Tomatoes
黑橄榄 适量(可选)Black Olives(Optional)
迷迭香 适量 Rosemary
罗勒叶 适量(可选)Basil (Optional)
盐和黑胡椒 适量 Salt and Black Pepper
橄榄油 适量 Olive Oil
步骤/Steps:
1.选一个较大的保鲜盒,加入所有材料搅拌到无干粉,盖上放冰箱 5度左右冷藏 10-15 小时
Choose a large food container and add all the ingredients inside. Mix them until there is no dry ingredients, then cover the container and place it in the refrigerator at 5 degrees Celsius for 10~15 hours.
2.烤盘上刷上橄榄油,倒入面团后盖上松弛 30 分钟,然后轻轻的向四周拉扯面团,直到铺满烤盘,盖上继续回温醒发到 2 倍大
Brush the baking sheet with olive oil, and pour the dough onto it. Cover and let it rest for 30 minutes, then gently pull the dough around until it covers the baking sheet. Cover it and store in a warm place until it doubles in size.
3.手指沾满水在面团上扎一些孔,注意不要太用力,尽量避开大气泡这样烤出来更蓬松。
Use wet fingers to poke some holes in the dough. Be careful not to use too much force and try to avoid poke big bubbles.
4.将切好的小番茄和橄榄填入空洞中,加入迷迭香或者你喜欢的香草,撒一点点海盐和黑胡椒,最后别忘了在表面淋上橄榄油这是表皮酥脆的关键
Fill the hollow with diced tomatoes and olives, and add rosemary or your favorite herbs. Sprinkle a little sea salt and black pepper, and finally don't forget to drizzle olive oil on the surface. This is the key to make crispy skin.
5.烤箱 230 度预热好后烘烤 23-25 分钟,去除后及时脱模放凉,然后切块后就可以享用了,多余的可以装入保鲜袋冷冻,下次取出回温再用平底锅煎一下就好
Preheat the oven to 230 degrees Celsius and bake for 23~25 minutes, then let it cool on a rack. You can freeze the leftover in zipper bag, and heat it with oven or frying pan next time.
