Hi Bold Bakers!
Rolled ice cream is a trend that has swept across the world.
Shops have popped up everywhere selling this delicious frozen treat.
Now in my opinion, everybody has to experience it.
That's why I'm going to show you how you can make it at home with no special equipment.
No mixer, no nothing.
And best of all, it is just two ingredients.
So let's get started.
So here's the great news.
The two ingredients that you need for this ice cream are the same as my two ingredient
no machine ice cream.
Cream and condensed milk.
Now for the cream, it can be pouring cream, it doesn't have to be whipping cream, it
can even be Nestle cream.
Anything at all will work really well.
Now for the condensed milk, if you don't have condensed milk in your country, you can always
make your own and I have a video on my website, BiggerBolderBaking.com, of how you can make
it and it's really, really easy.
Also don't forget to subscribe to my YouTube channel so you don't miss out on any of my
upcoming videos.
Okay, let's make our rolled ice cream.
So all you need to make your ice cream is a lovely, big, clean baking tray.
Now my one is 12 inches by 17 inches.
In and around this size will work really well.
So the best thing about rolled ice cream, you can get really creative and make any flavor
you want.
The first one I'm going to show you is a strawberry cheesecake rolled ice cream.
So now onto our baking tray, we're going to pour our two ingredients, which are the base
for our ice cream, cream and condensed milk.
This is how easy it is.
The most equipment you need for this ice cream is a baking tray and some spatulas, that's
it.
Okay, so now for our flavors.
A strawberry cheesecake always has graham crackers, so just go ahead and toss those on
there.
Lovely.
And then you can't have a strawberry cheesecake without fresh strawberries.
You can also use defrosted frozen strawberries.
I'm going to scatter those guys on there, looking good.
And then of course, a little bit of cream cheese.
So here we have all of the components for a cheesecake, so what you want to do is just
get some spatulas or some offsets, and we are going to break the ingredients into the
ice cream.
This is exactly what they do in the shops, it's really cool.
Make it really fine.
Crush up those cookies, strawberries, you'll see it start to turn kind of a reddy color.
Lovely.
Make sure the cream cheese gets in there.
If you've been to a rolled ice cream shop, it's really satisfying just to sit there and
watch them mixing up the ice cream and then curling it, it's so cool.
And it freezes in no time.
Now here is the crazy part.
We're done.
All we have to do with this right now is pop it into the freezer.
Now you want to freeze it for a minimum of 5 hours, but I like to leave it overnight
just to make sure it gets really frozen so you can curl it really well.
Also make sure that your tray is even in your freezer, you don't want to tilt it because
then all your ice cream will go to one side, so just get it as even as you can.
So now while our first rolled ice cream is in the freezer, we're going to go ahead and
make another flavor.
This is really simple, it is a cookies and cream one, and it is absolutely delicious.
So onto our tray, we're going to add on our cream, condensed milk, just like before.
Now remember, like I said, you can use pouring cream, it doesn't have to be cream that whips,
which is great.
There we go.
And then of course, you can't have cookies and cream without Oreos, or any kind of chocolate
biscuit that you have to hand.
So we're going to pop a few of those in there, lovely.
I think this has to be one of the most simplest desserts I've ever made on Bigger Bolder Baking.
Then we're just going to go in and smush them up really small.
Just keep on going over the cookies again and again, until the bits are really tiny.
Sometimes what I like to do is go in with the back of my spatula and smush them down.
Okay great, this is our cookies and cream flavor.
Now like I said before, just make sure that it is really even on the tray.
You want to just make sure it goes into all the corners, lovely.
And then we're going to pop them flat into the freezer.
So once I tried this next flavor, I knew I had to make it for you guys, because it is
absolutely delicious, and also there's a secret ingredient in it.
It is a Nutella rolled ice cream.
So now you know at this stage what we're going to do.
Pour in our cream, and then pour in our condensed milk.
So now if you're a vegan, you can still try and make this.
You can use my coconut condensed milk, which is on BiggerBolderBaking.com, and then also
instead of cream, use a can of coconut milk, and it should work really well, and taste
yummy.
Okay, now of course the star of the show, a big scoop of Nutella, yummy.
We love Nutella here on Bigger Bolder Baking, and I actually did a video recently of three
ingredient Nutella treats, and you guys went nuts for them, so I'm gonna try and do another
one really soon.
So now here is my secret ingredient, can you tell what that is?
A Ferrero Rocher, and I'm just gonna plop that there in the middle, and I'm gonna take
my spatulas, and then I'm just gonna chop it all up.
So now my flavors are just suggestions, at this stage I'm sure you can see that you can
add any kind of flavor you want into it.
You can add in M&Ms, if you want some fruit like mango, you can put in some mango in here,
different cookies, it'll pretty much take whatever you put into it.
Lovely.
This is looking good, it's nice and smooth, and just like the others, I'm gonna even out
the tray, make sure that's hitting all the corners and it's a nice thin layer.
Perfect.
Another rolled ice cream ready for the freezer.
So it has been a few hours, and finally I get to roll my ice cream.
Now obviously the longer you leave it freeze, the better it will roll, so give it as much
time as you can.
And another tip, work fast.
This does start to melt pretty fast, so you want to roll and just work with it as fast
as you can.
And then it's ready to be eaten.
So the strawberry cheesecake is frozen solid, but like I said, it does start to soften fast,
so we're gonna go ahead, put in our spatula, and then curl it up from one edge to the other.
Look at those lovely curls.
Now just in case yours doesn't curl, it might need a little bit of a help with the spatula,
but just move it along and try and get a cylindrical shape.
And just keep on rolling.
This is kind of crazy, isn't it, that it's like two ingredients, no machine, and you
get this amazing ice cream at the end.
Okay, lovely.
Then just very carefully, with some tongs, pick up your ice cream rolls, and put them
straight into your container.
I'm really happy and a little bit shocked that I pulled off this rolled ice cream, but
it looks fantastic.
Now in true Bigger Bolder Baking fashion, we're gonna decorate the top.
So for the strawberry cheesecake, I'm gonna pipe on some whipped cream, and then some
graham cracker wafers.
In you go.
I have a nice little strawberry, pop him on there, beautiful.
And then for the Oreo, simply some more whipped cream, you have to have whipped cream with
ice cream.
And then a nice big Oreo on top.
Gorgeous.
So for Nutella, you get some whipped cream too, and then I have a little bit of chocolate
sauce that I'm gonna drizzle over the top.
Gorgeous, look at that.
And then I have an extra Ferrero Rocher, gonna pop you on there.
This rolled ice cream was so easy to make with no machines at all, and remember, get
really creative and make any flavor that you like.
It's one of the perks of the job, the tasty taste.
I've got a pretty sweet job.
This is awesome.
I think this is actually better than the one I got in the shop, I just got a big lump of
cream cheese.
And cookie.
Oh my gosh, there is no doubt about it, you have to try and make this, it is so delicious.
Yum.
