Latvians have many distinct dishes but a very popular one to bake at Christmas is Piparkukas. These gingerbread cookies are more soft, nicely spiced and so delicious. Christmas in Latvia cannot be imagined without baking tray upon tray of gingerbread (piparkūkas). It is a national pastime in the days leading up to Christmas. This is a wonderful Christmas cookie which my family prepare every year.
Welcome to Ela's Yummy Food.
Today I'll show you how to make piparkūkas.
Piparkūkas in Latvian mean gingerbread cookies
and they're so delicious.
My favorite childhood treat
and every single family in Latvia will buy them in bulk.
We actually have so many variations in supermarkets selling those.
So I will share this recipe with you.
I hope you enjoy it and let's get started.
We're going to need plain flour, sugar,
golden syrup, baking soda, butter.
I've got eggs, ground cinnamon, cloves, nutmeg and ginger.
And I've got a lot of different shapes to cut my cookies from.
Add your golden syrup into your small pan.
Add all your spices into your golden syrup and mix that in.
Into a bowl add two eggs, sugar.
Whisk it until it's combined.
So put your golden syrup with all the spices inside.
Add your butter.
In a small bowl add half
a teaspoon of your bicarb soda.
and then add hot water mix that in add your eggs
and sugar then add your bicarb soda with water
now we're going to add flour
a little bit at a time dough
is done place it on a floured surface
and we're just gonna knead it a little bit more just
to make sure it's nice and incorporated
um i've added a bit more flour
so just keep adding until the dough is nice and easy to work with
now we're gonna put some cling film on top of our dough
and that goes into the
fridge for about 24 hours I have taken
my dough out of the fridge and I let it
sit at a room temperature
for about one hour now we're gonna work with half of
the dough at a time I've got different shapes
and figures for my gingerbread
cookies and so
just cut them
out brush each
cookie with your
egg wash place
your icing into a piping bag decorate
your ginger cookies with your icing
however you like it. I like to just go around each cookie.
