What You Need: For Electric Sugar: 1/2 cup sugar 1/4 tsp water 4 drops yellow gel food coloring
For Marshmallows: 2 1/2 tablespoons gelatin 1 cup water 1 1/2 cups sugar 1/3 cups light corn syrup 1/3 cup honey 1/2 TBL vanilla extract 1/2 cup melted chocolate No-stick spray, as needed
For Electric Sugar: Add yellow food coloring to 1/4 tsp water. Combine with sugar in a small zip top bag until the sugar is bright yellow. Set aside.
For Marshmallows: In the bowl of your stand mixer, combine your gelatin and 1/2 cup of your water. Set aside. Spray a 9 x 13 pan with no-stick spray. Line it with parchment, and spray the parchment with no-stick spray. Set aside.
In a saucepan, add remaining water, sugar, corn syrup and honey. Cook until it reads 238 degrees on a candy thermometer. Slowly pour into your stand mixer with the reserved gelatin mixture on low heat. Once it’s all in, beat on high for 12 minutes. It should be tripled in size. Add your vanilla extract.
Spray a spatula with no-stick spray and dump the marshmallow mixture to your prepared pan. Spread as evenly as possible. Allow to set for at least four hours.
Once set, spray a Pikachu cut-out with no-stick spray and punch our marshmallows. Quickly place marshmallows into your electric sugar and toss until coated. Then, dip Pikachu ears first into some melted chocolate. Allow to set on a cooling rack. Eat within a week.
Let's make some easter marshmallows. Pikachu's kind of a bunny, right?
First, mix some gel food coloring with a little bit of water.
Put some sugar in a zip-top bag, add your color,
seal it up, and mix until bright yellow.
Then you'll want to sift it out because it gets kind of clumpy.
Congrats! You just made electric sugar.
Place it in a bowl and set it aside.
Now line a 9x13 sheet pan with parchment paper
and spray that down with no-stick spray.
Set that aside.
In the bowl of your stand mixer, add some gelatin and some water.
set it aside in a saucepan combine water sugar
and corn syrup you can cut it with a little bit
of honey but you can use all corn syrup
if you prefer bring it to a boil and cook until it reads
238 degrees on a candy thermometer once it does slowly
pour it into your gelatin mixture on low
speed once all your syrup is in crank the mixture to high
and whip for 12 minutes or until it's
almost triple in volume don't forget to add
your vanilla near the end now dump all the yummy white
stuff into your prepared pan
and smooth it out best you can with a greased spatula.
Now allow it to set up for four hours.
Grab yourself a Pikachu cookie cutter,
I got this baby on Amazon, grease it up with no stick spray,
and punch out your Pikachu.
The plural of Pikachu is Pikachu.
Then roll your Pikachu in the electric sugar and allow it to dry
10 minutes on a cooling rack.
Next we're going to lower Pikachu to his chocolatey doom.
SCREAM ALL YOU WANT! Careful though, just the ears.
Repeat with the rest of the marshmallows
and allow for the chocolate to set up.
Ain't they cute?
Take a big bite, ears first!
