Today we are making breakfast cookies because if anyone ever told you that you cannot have cookies for breakfast they are wrong! Jamie has been leaving super early in the morning to go work on the roof of a fixer upper house we bought recently. I wanted to make him something easy to grab and go out the door so he has a filling snack while working. These are basically thick oatmeal cookies packed with a bunch of good stuff to give you energy in the morning.
This easy breakfast recipe is so simple to throw together because it uses no eggs and no flour at all. You literally just dump everything into one bowl and mix it up. They do not puff up in the oven so you just smush them down on the baking sheet into whatever size you want. The peanut butter and pure maple syrup hold everything together while the dried cherries and blueberries give it such a good flavor.
If you are looking for healthy morning snacks or quick breakfast ideas you definitely need to try baking these. They store great and you can customize them with whatever seeds or dried fruit you have in your pantry. Let me know in the comments what you want to see us make next!
➡️ Ingredients 2 cups rolled oats 1/4 cup pure maple syrup 1 cup creamy peanut butter 1/3 cup unsweetened applesauce 1 overly ripe banana 1/2 cup dried cherries 1/2 cup dried blueberries 1/2 cup unsalted pumpkin seeds without the shell 1 teaspoon cinnamon 1/2 teaspoon salt
Tips and Tricks 🥜 Use a creamy peanut butter instead of a crunchy one because the dough will hold together much better in the oven. 🍌 Make sure your banana is super overripe and mash it up really well with a fork before adding it to the bowl. 🍒 You can swap out the cherries and blueberries for dried cranberries or any other dried fruit you like. 🌻 If you do not have pumpkin seeds you can easily use sunflower seeds instead for a great crunch. 🍇 Do not use raisins if you plan to share any dropped bits with your kitchen helpers since grapes and raisins can be toxic to dogs. 🥣 Spray your measuring cup with a little bit of coconut cooking oil before scooping the peanut butter so it slides right out easily.
Kitchen Helpers 🐶 Eleanor is really trying hard to take over the title of best kitchen helper ever since Memphis passed away on June 6 of 2026. 🥄 Eleanor stayed right by the counter today and got to taste test the dried cherries, blueberries, and pumpkin seeds! 🥜 She even got to lick the peanut butter spoon before it went straight into the sink. 🛋️ Kira is still a little scared of the kitchen noises so she was holding down the couch in the other room. 🥣 I made sure to walk out to the living room and bring Kira plenty of taste tests too so she did not miss out.

Welcome back to Snow Dogs Cooking where if I can cook it, so can you!
So, Jamie recently has been working on a fixer-upper house that we bought.
I can insert the vlog, so you can kind of see what it looked like when we first bought it.
Somewhere here in the cards and down in the video description below.
But, he's been leaving really early in the morning everyday to go out there and work.
Because right now, they're doing the roof.
So, I wanted to make something easy for him to grab and go out the door.
And to have out there in the morning for him to snack on.
So, we're making breakfast cookies.
Yeah! Breakfast cookies.
So, if anybody has ever told you that you can not have cookies for breakfast, we're going to prove them wrong.
We're basically making oatmeal cookies.
But with a whole bunch of good stuff for you to make it something you can eat in the morning.
This recipe will make about twelve cookies.
So, if you want to double it, just keep that in mind.
Let me tell you everything you're going to need.
First, you're going to need two cups of oats.
Now, I'm using old fashioned oats.
You can use the quick oats as well.
They should pretty much both work the same in this, because we are baking these.
You will need a quarter of a cup of pure maple syrup.
Not log cabin sugar syrup.
Real maple syrup.
This is actually maple syrup that we made.
It's a dark maple. You can use whatever you want.
But, a quarter of a cup of maple syrup.
One cup of creamy peanut butter.
This is not going to work as well if you use a crunchy peanut butter.
So, I highly recommend a creamy one.
And, just for the extra fun, I got the honey creamy, because I wanted to.
You're going to need a third of a cup of unsweetened applesauce.
You want the unsweetened one, otherwise it's not going to turn out right.
So, unsweetened applesauce.
You're going to need one overly ripe banana.
Mine looks like this, because I pulled it out of my freezer so it could thaw.
We're going to mash that up with a fork.
And then, you're going to need some things to add into the cookies.
You're going to need a half a cup of cherries and a half a cup of blueberries.
Now, most people will use raisins and then the cherries or the blueberries.
I don't allow raisins or grapes in this house because of the dogs.
I just don't.
So, they're toxic to dogs.
Well, they can be. Some dogs don't have any issues with them.
I don't want to find out if mine do.
So, we don't really keep raisins in the house.
But, we always have dried cherries and dried blueberries.
You can use dried cherries, dried blueberries, dried cranberries, dried raisins.
Which are dried grapes, if you don't know.
So, any combination of those things.
But, I'm using blueberries and cherries today.
You're also going to need a half a cup of unsalted pumpkin seeds.
Without the shell on them.
You want the already seeded ones.
You can also switch these out for a different type of seed.
If you want to do sunflower seeds, those would probably work as well.
But, this is the flavor profile we're going for.
And then, you're going to need a tisp of cinnamon and a tisp of salt.
And no joke, that's it. That's everything you're going to need for this.
There's no eggs in it. There's no flour in it. There's no floof powder.
These cookies do not puff up.
We'll talk about that in a minute.
Let me get my mixer.
One of the things I really like about this, all of this stuff just goes in here.
When you measure it, it goes in the bowl and you mix it.
You don't have to do dry ingredients first and wet ingredients.
It all goes in together.
And you mix it all together.
I am using my KitchenAid mixer.
You can also use just a bowl and a spoon or a bowl and a hand mixer.
Any of that will work.
And I am going to mash this banana up before I dump it in there.
Don't forget to preheat your oven to 325.
We got our bowl. We got our oven preheating.
First thing we're going to add, two cups of rolled oats.
We're going to add the half a teaspoon of salt next.
Now, I think I said a half a teaspoon of cinnamon.
It's one full teaspoon of cinnamon.
Well, I put a half in already and now we're going to add the other half,
making it one full teaspoon of cinnamon.
We have a half a cup of dried cherries into the bowl.
Oh gee!
Would you like...
Wah! Who dropped my paper towel?
I'm glad you didn't try to eat that.
Okay.
Would you like a cherry?
Is it good?
Munch, munch, munchin' it?
Okay, she likes it.
Alright, let's go give one to Kira.
You're going to get to try a whole bunch of stuff.
Dried cherry.
I know you like them because dad eats them out of the bag.
Yeah?
Okay, good stuff.
Half a cup of dried blueberries into the bowl.
Gee, you are going to get to have a whole bunch of stuff today, aren't you?
Blueberry?
Is it good?
Here I come Miss Queen.
Blueberry?
You love it.
Look at that!
Good stuff.
Half a cup of pumpkin seeds into the bowl.
I know you love these because you eat them straight out of the pumpkin.
Pumpkin seed?
Good stuff?
Alright, let's go give one to Kira.
Here we come.
Pumpkin seed?
All the good stuff today.
You got all kinds of stuff in these cookies that you get to eat.
We're going to do that whole cup of peanut butter.
I lightly sprayed this with coconut cooking oil.
So, we're going to put a cup of peanut butter into here.
I'm still probably going to need two hands for this, but I have a cup of peanut butter.
I don't want too much noise.
Nope.
Oh!
It's coming out.
Hold on.
We're going to do that again.
Ready?
Yeah, we're going to do it the old fashioned way.
There it is.
I'll scoop it out.
Okay.
It actually worked pretty good.
I just needed the spatula a little bit.
Um...
Spatula or measure?
Measure?
Okay.
Here you go.
Whoa!
I'm going to name you soap and water.
Isn't that good stuff?
Watch this you guys.
Guess where this goes?
Straight into the sink.
How about you?
Good stuff?
Guess where this goes?
Also, straight into the sink.
Those will not get used again.
Just so you know.
Next, a quarter of a cup of pure maple syrup.
Yes, I know you can have this, but no, you're not getting this one.
I'm sorry.
One smashed up, over ripe banana.
One third of a cup of unsweetened applesauce, which yes, I know you can also have that technically
Everything in here you could have I could make these and make them super cribby and they would be for dogs
But we're not doing that we're making them for Jamie, that's all of it
Put it in your mixer block your mixer. This dough is going to be thick and sticky
Mix it together. I'm like a tube
Mixy mixy. I know you're like, but I want to eat all of it. Yeah, I bet you do. It's gonna look like that
Thick and a little bit sticky. I'm gonna use this and I'm gonna put 12 of them out on my cookie sheet
Now as I said, they do not spread so we're kind of gonna put them on there and smoosh them down
Make them look like cookies. You're still here waiting, huh? You really are turning into the best kitchen helper ever
You could lay down in that spot right there though. That's what I really need you to do
I need you to lay down right there. No, you cannot have my my little scooper. That's not for you
okay, so I used to the quarter cup measure and I plopped them out and then I
Kind of picked them up a little bit and balled them and then just flattened them with my hand
Tried to make them all the same thickness and literally used all of the batter
Got 12 cookies all even now. They're gonna go in the oven at 325 for
15 to 18
Minutes, let's throw them in the oven
so these went for
19 minutes the one in the back. It's kind of hard to tell that a little bit darker than the ones in the front but
19 minutes now, I'm gonna leave them on this tray because you can kind of hear
There's still moisture in them, which is okay. These are supposed to be kind of like a softer cookie
I'm gonna leave them on here for 10 to 15 minutes. Then I'm gonna move them to a cooling rack. They smell
Amazing
Welcome home, by the way
All right, these you're taking with you when you go to work tomorrow
They're still warm. Yeah
They won't be as warm tomorrow. Well, if you leave them in the Sun, they will be
Like you've been their breakfast cookie. This is not like a cookie cookie. This is like a you need energy cuz you're rough and cookie
They're good, yeah, I'm concerned that might be a little too dense
Well, then just eat half a one
Yeah, then just eat half a one
Good. Well, you're taking them to work with you tomorrow
Yeah, they won't be warm
Girls just because you can have everything that's in them and you tried almost everything that's in them doesn't mean you get one
Maybe I should have a middle
Yeah, I'm good, they'll take them to work tomorrow and they'll cool a little bit more they look pretty
Clearly we didn't wait for them to cool all the way. They're pretty good. Like it's like Jamie said it's like granola
They'll be a little bit less soft when they cool completely they cool for quite a while, but
That's pretty good
It's gonna be nice to have while he's out there working and need something to eat. So yeah, they're pretty good
Oh, I was I was kind of scared because I did cherries and blueberries, but I actually like it
Let me know what you guys want to see us make next
