Creamy Dill Macaroni Salad Everyone Will Love!

Snow Dogs Cooking With Jess

Today we are making an easy creamy dill pasta salad that makes the perfect summer side dish for your next barbecue, family gathering, or weeknight dinner. We had so much fresh dill growing that I just had to put it to good use. This cold macaroni salad has no pickles, letting the bright, fresh flavor shine through in a smooth and tangy homemade dressing.

This simple pasta salad recipe pairs wonderfully with burgers, hot dogs, grilled chicken, and all your favorite cookout meals. It comes together quickly with noodles of your choice (I prefer Elbow Mac) crunchy fresh radishes, and finely diced green bell peppers, all tossed in a creamy sour cream and mayonnaise dressing with a hint of Dijon mustard. It is a quick make ahead potluck dish that gets even better as it chills in the fridge overnight.

If you are looking for easy pasta salad recipes or simple side dishes for a crowd, this dish is versatile and easy to customize with your favorite vegetables and proteins. Whether you are meal prepping for the week or hosting a backyard party, this refreshing cold noodle salad is sure to be a hit with everyone at the table.

Ingredients
2 cups dry elbow macaroni
1 large or 2 small green bell peppers
1 cup radishes
1 cup mayonnaise
1/2 cup sour cream
1 tablespoon Dijon mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh chopped dill

Tips and Tricks
🌿 Let the salad chill in the refrigerator for at least 4 to 6 hours before serving, though leaving it overnight gives the best flavor.
🍗 Turn this side dish into a full meal by stirring in a cup of chopped rotisserie chicken, canned tuna, ham, or hard boiled eggs without needing extra dressing.
🌶️ Adjust the cayenne pepper to your personal heat preference, or leave it out completely if you prefer zero spice.
🥗 Dice your radishes and green peppers extra small so you get a nice crunch in every bite without huge chunks taking over.
✨ Save a little bit of fresh chopped dill on the side to sprinkle over the top as a pretty garnish right before serving.
