With the days drawing in, it's the perfect time to embrace a little slow living. Let me take you on a nature walk to enjoy one of Devon's most beautiful scenic walks, as well as some Autumn baking. I'm going to be making Toffee Apple Cookies. A super delicious home recipe for cosy season 🤎

Recipe:

🍂🍁🍎 Toffee Apple Cookies🍎🍁🍂

These delicious autumnal cookies are packed with oats, walnuts, fresh apple and chewy pieces of toffee. Perfect with a cosy cup of tea on a crisp autumn day!

Ingredients

• 3 oz (85g) salted butter, softened
• 3 oz (85g) dark muscovado sugar
• 1 egg
• 1 tsp vanilla extract
• 1 tbsp milk
• 2 oz (55g) plain wholemeal flour
• ½ tsp bicarbonate of soda
• ½ tsp ground cinnamon
• 4 oz (115g) porridge oats
• 3 oz (85g) walnuts, chopped
• 10–12 chewy toffees, roughly chopped (I know mine looked like hard toffee but that’s just how they cut! Weird I know!!)
• 2 small eating apples, diced

Method

1. Preheat the oven to 170°C fan and line a baking tray with baking paper.
2. Cream the butter and sugar together until light and fluffy.
3. Add the egg, vanilla extract and milk, mixing until well combined.
4. Sift the flour, bicarbonate of soda and cinnamon into a bowl. Fold into the butter mixture using a wooden spoon, taking care not to overmix.
5. Add the oats, chopped walnuts, diced apple and chopped toffees. Stir until everything is evenly combined.
6. Use an ice-cream scoop to portion the mixture into small balls and place them on the prepared baking tray, leaving a couple of inches between each one. You may need to bake them in two batches.
7. If the cookies fall apart slightly, simply squidge them back together with your fingers.
8. Bake for 20 minutes, until golden. Leave to cool slightly before enjoying.

As these can go a bit soft in storage I would say they’re best enjoyed on the day of baking! 🍎🍂
