Making The Cutest Pumpkin Cheesecake Truffles

Today Jamie and I are trying something a little different and super fun. We are making pumpkin cheesecake truffles! I am using a silicone mold to make them actually look like little pumpkins, but if you want to keep it super simple you can just roll them into balls and dip them in the candy coating. I am not usually a huge fan of pumpkin flavored things because of the nutmeg, so this recipe is completely nutmeg free and honestly so delicious!
These pumpkin truffles are the perfect fall treat and really easy to make. You just mix up your cream cheese, pure pumpkin, confectioners sugar, and spices, fold in some crushed graham crackers, and let it chill. Our kitchen helpers were definitely hanging around the whole time hoping for a dropped snack today. If you are looking for a super cute and tasty autumn dessert to share with your family, you have to try these out! Let me know in the comments if you think I should try making a full pumpkin cheesecake next!
Ingredients
4 oz room temperature cream cheese
3 Tbsp confectioners sugar or powdered sugar
1/3 cup pure plain pumpkin
3/4 tsp cinnamon
1/8 tsp ground ginger
1/16 tsp or a pinch of cardamom
15 plain graham crackers or about 1 and 3/4 cups crushed graham crackers
Orange candy melts
Tips and Tricks
🎃 If you do not have a silicone mold you can just use a cookie scoop to roll the filling into balls, chill them, and dip them right into the candy melts!
🍫 If you prefer to use pumpkin pie spice instead of individual spices just use a half teaspoon of pumpkin pie spice and a half teaspoon of cinnamon.
🥣 You can use a food processor to crush your graham crackers but putting them in a bag and smashing them is way more fun!
🕒 If you are short on time you can make the filling the night before and let it chill in the fridge overnight.
✨ If you are doing the easy dipping method add some fun sprinkles on top before the candy coating dries!
🎃 Have leftover pure pumpkin? Save it in the fridge and add a scoop to your dogs food all week long!
Kitchen Helpers
🐶 We had to pay the cheese tax with a little taste of cream cheese right off the spoon!
🐶 Eleanor and Kira were busy enjoying their bully sticks while we prepped the ingredients.
🐶 Kira heard the clacking spoon and realized the oven was not on so she hung out with us the entire time!
🐶 Since Kira stayed the whole time without getting scared she got officially promoted to first best kitchen helper for the day!
🐶 We gave a shoutout to Memphis our best kitchen helper ever who always loved hanging out in the kitchen.
🐶 The girls even got a little piece of a graham cracker and a tiny yogurt chip for being so good.
