🍰 Ingredients:

For the cake:
Butter 55g (¼ cup)
Oil 180ml (¾ cup)
Sugar 300g (1 ½ cups)
4 Eggs
Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)
Plain Flour 400g (2 and 1/2 cups)
Baking powder 2 and ½ teaspoons
Milk 320ml (1 ⅓ cups)

Butter cream frosting:

Butter 110g (1/2 cup)
Powdered sugar / icing 300g (2 ½ cups)
Heavy cream 60ml (¼ cup)
Vanilla extract 1 teaspoon

Strawberry jam/ jelly (optional)

Measuring cup size - 240ml
Baking pan 30x20 cm
Bake in a preheated oven at 170°C (350°F) for 30–35 minutes

Method:

Whisk the butter and oil together for about 2 minutes, until creamy.
Add the sugar and whisk for 2 minutes until well combined.
Add the eggs and vanilla and whisk for about 2 minutes.
Sift the ½ of the flour and baking powder directly into the same bowl. And mix well.
Add the milk and mix.
Add the rest of the flour.
Whisk on low speed for about 15 seconds.
Give a final gentle mix to ensure everything is evenly combined.
Pour the batter into the lined baking pan.

Bake in a preheated oven at 170°C (350°F) for 30–35 minutes, or until a skewer inserted in the center comes out clean.

Make the Butter cream frosting while the cake is cooling.
Gently mix the powdered sugar and softened butter.
Whisk for about 3 minutes.
Add the cream and vanilla and whisk again for about 1-2 minutes.
Spread over the cooled cake.
Swirl some Jam/ jelly over the cake (optional).
