A super soft and airy cake with a juicy cherry cream filling! A simple recipe.
This cake is the perfect combination of airy yeast dough, delicate vanilla cream and fruity cherries. Even while baking, a pleasant aroma of warm milk, butter and fresh lemon zest fills the kitchen, immediately making you want to take the first bite.
The dough becomes particularly soft and supple, while the creamy filling with its delicate sweetness harmonizes wonderfully with the slight acidity of the cherries. Each layer complements the other: fluffy, moist and at the same time pleasantly light.
After baking, a golden-brown, aromatic cake is created that is slightly crispy on the outside and wonderfully soft on the inside. Dusted with a little icing sugar, it becomes a real eye-catcher – ideal for guests or simply to treat yourself.
An uncomplicated recipe with an impressive result – just the thing if you want to enjoy something homemade, fragrant and truly delicious.
Recipe:
500-550 g wheat flour (4 cups).
3 tablespoons of sugar.
20 g fresh yeast (1 oz).
250 ml warm milk (1 cup).
1 egg + 1 egg yolk.
100 ml vegetable oil (7 tablespoons)
5-6 g salt (1/2 teaspoon).
1 tbsp vanilla sugar
zest of one lemon.
For the filling:
200 g frozen cherries (≈ 1¼ cups)
For the vanilla cream (pudding cream):
1 egg
1 tbsp vanilla sugar.
4 tablespoons of sugar.
30 g cornstarch (1/4 cup)
240 ml milk (1 cup)
50 g butter (≈ 3½ tablespoons)
Knead the dough and let it rest for 60 minutes.
Shape the cake as shown in the video. Brush with the egg-milk mixture.
Bake at 180 °C (356 °F) for 40-45 minutes.
