🍰 Ingredients:
Apricot pieces 100g (Dried or fresh)
Plain Flour 200g (1 and ⅓ cups)
Baking powder 1 teaspoon
Sugar 150g (¾ cup)
Butter 150g (⅔ cup)
Eggs 3
Vanilla extract 1 teaspoon
Milk 60ml (¼ cup)
Lemon sugar syrup:
Lemon juice from 1 lemon
Warm water 60ml (¼ cup)
Sugar 50g (¼ cup)
The Easy Ganache:
White Chocolate 300g
Heavy cream 180ml (¾ cup)
Apricot Jam/ jelly 2-3 tablespoons
White Chocolate shavings (for decoration)
Measuring cup size - 240ml
Method:
Add all the ingredients (except the Apricot pieces) into a bowl
Whisk at low speed for about one minute. Stir in between
Fold in the Apricot pieces
Baking pan size 20x20 cm (8x8 inch)
Bake in a preheated Oven at 175c (350f) 30-35 minutes
Let it cool down
Make the Easy ganache:
Microwave the chocolate and the cream in a bowl for 1 minute
Mix well
Add the Apricot jam/ jelly
Mix well
Cut the cake in half
Spread half of the ganache in the middle
Cover with the other cake half
Spread rest of the ganache over the top
Decorate with White chocolate shavings
