🍰 Ingredients:

Blueberries - Frozen or Fresh 150g (1 cup)

Plain Flour 200g (1 and ⅓ cups)
Baking powder 1 teaspoon
Sugar 150g (¾ cup)
Butter 150g (⅔ cup)
Eggs 3
Vanilla extract 1 teaspoon
Lemon zest 1 teaspoon
Lemon juice 30 ml (2 tablespoons)

The easy ganache:
White Chocolate 300g
Heavy cream 180ml (¾ cup)
Few more Blueberries

White Chocolate shavings (for decoration)

Measuring cup size - 240ml
Baking pan size 20x40 cm


Method:

Mix all the dry ingredients together.
Add the wet ingredients into the same bowl.
Whisk for about 30 seconds.
Give it a mix.
Whisk again for about 30 seconds.
Give a final mix.

Add to the baking pan.
Place the blueberries on the top.

Now Bake in a preheated Oven at 175c (350f) 20-25 minutes

Let it cool completely.

Make the ganache:

Microwave the white chocolate and the cream together for about 1 minute.
Mix well.
Chill for about 10 minutes.
Now whisk until creamy and light.
Mix in a few more Blueberries.

Cover a 20x20 cm Baking pan with cling film.
Cut the cooled cake in half.
Place one part in the baking tray.
Spread half the ganache over it.
Cover with the other cake half.
Spread the rest of the ganache over the cake.
Chill for about 10-15 minutes.

Add some grated White chocolate shavings over the ganache.
