No-Bake Peach Cobbler Dessert

Ingredients:

For the Filling:
300g fresh, frozen, or canned peaches, chopped into small pieces
Lemon curd, orange curd, peach jam, or peach jelly (optional)

For the Cream Layer:
500ml (2 cups) heavy cream
200g (⅔ cup) condensed milk
1 teaspoon vanilla extract

For the Layers:
350–400g sponge fingers (approximately 60 pieces)
180ml (¾ cup) milk, for soaking

Equipment:
Measuring cup size: 240ml
Baking dish: 28 × 18 cm (11 × 7 inches)

Method

Prepare the Filling:
Chop the peaches into small pieces and set aside.
Prepare the Cream:
In a large bowl, beat the heavy cream for 1–2 minutes until slightly thickened.
Add the condensed milk and vanilla extract.
Continue beating until the mixture becomes thick, smooth, and holds its shape.

Assemble the Dessert:
Quickly dip the sponge fingers into the milk and arrange them in a single layer in the baking dish.
Spread half of the cream mixture evenly over the sponge fingers.
Scatter half of the chopped peaches over the cream.
Drizzle with lemon curd, orange curd, peach jam, or peach jelly, if using.
Repeat the layers with the remaining soaked sponge fingers, cream, peaches, and optional curd or jam.

Chill:
Cover and refrigerate for at least 6 hours, or preferably overnight, to allow the layers to soften and set.

Serve:
Slice and serve chilled.
