The Easiest Creamy Butternut Squash Soup You'll Ever Make

Today, we're using butternut squash we grew on our own farm to make this delicious, savory soup. It's so simple in the Instant Pot, and the Snow Dogs are here to supervise (and taste-test the carrots, of course).
Here is what you need for this easy Butternut Squash Soup recipe:
4 lbs butternut squash
About 1 tbsp olive oil
1 tbsp butter
1 small onion (or half of a medium onion)
3 cloves minced garlic
1 russet potato
3 cups chicken broth (or vegetable broth)
1/2 tsp cinnamon
Salt (to taste)
Pepper (to taste)
1 large carrot (or a handful of baby carrots)
1 (5 oz) can coconut milk (or half of a large can)
1-2 tbsp maple syrup (optional)
TIPS & HIGHLIGHTS FROM THE KITCHEN
🥣 No Instant Pot? No problem! You can boil all the ingredients (except the milk) on the stove until the vegetables are nice and soft, then blend.
🥕 You don't need to dice the carrots or potatoes perfectly, as they will be blended smooth with an immersion blender.
😋 The maple syrup is optional but recommended if you are using unsweetened coconut milk. It adds a nice balance of sweetness!
🥛 The coconut milk is also optional, but it's what makes the soup extra creamy.
😋 Blender Options: An immersion blender works best! If you don't have one, you can use a hand mixer, a food processor, or even a potato masher for a more rustic soup.
🐶 Dog Safety Tip: Do NOT add nutmeg! We don't use it because it's very toxic to dogs.
🧅 Pro Tip: To peel garlic easily, lay the flat side of your knife on the clove and give it a good squish. The peel will pop right off!

Memphis, Eleanor, and Princess all got to try a tiny "ribbon" of uncooked butternut squash. (Remember: only feed tiny shaved pieces, as large chunks of uncooked squash can cause digestive upset!)
All three pups also enjoyed the "carrot tax," showing off their good crunches.
Memphis was the best helper, staying in her designated spot so we wouldn't trip. We could see her nose going crazy when she smelled the soup cooking!
Kira, of course, made her appearance right at the end once all the cooking sounds were done.
