Mid-Autumn Festival is just around the corner! This year, I made these Matcha Taro Snow Skin Mooncakes. I love the refreshing taste of matcha combined with the rich and creamy taro filling. The snow skin is made with glutinous rice flour, and my formula ensures that it stays soft and chewy even after refrigeration. The subtle flavor of matcha is truly delightful when savored slowly!
中秋佳节将至,今年做了这个抹茶芋泥冰皮月饼,很喜欢清新的抹茶搭配香浓又绵密的芋泥,冰皮用到了糯米粉为主要原料,按照这个方法做的冰皮冷藏也不会变硬,口感会一直保持软糯,淡淡的抹茶细细品味真的别有一番风味!
Ingredients/食材:(50g一个可做13个/Makes 13 mooncakes, 50g each):
糯米粉40g Glutinous rice flour
粘米粉25g Rice flour
澄粉15g Wheat starch
豆奶140g Soy milk
牛油果油15g Avocado oil
海藻糖 25g Isomaltulose
馅料: 腰果酱60g 抹茶粉 6g 荔浦芋头 200g 椰浆 90-100g 海藻糖 30g
Filling:
Cashew butter: 60g
Matcha powder: 6g
Lipu taro: 200g
Coconut milk: 90-100g
Isomaltulose: 30g
