
「素食」来自春天的野菜,做成让西南人欲罢不能的沙拉 |【Vegan】Fishmint Root Salad
I have a fascination with fishmint root, although some people hated it. I have always felt that not many people like this dish and there is no need to share it. However, it's spring, why not try this spring special? so I still made this video.
野生的折耳根和种植的完全天差地别,这不夸张,香气上就已经完胜了,可能是自带西南f4基因哈哈,对折耳根有着迷一般的喜爱,虽然有人对它避而远之,但我就是属于喜爱的不得了的那拨人,一直觉得这个菜喜欢的人可能不多没有分享的必要,但为了不辜负这大好春光里挖的折耳根还是做了这个视频,喜欢的要跟着做起来哦!
Ingredients/食材:
野生折耳根 两把 Two handfuls of Wild fishmint root
薄豆干 2块 Thin Dried tofu
调味料/Seasoings:
粗辣椒面 1大勺 1 Tbsp Chili Powder
姜末 5g Minced Ginger
小米辣 2-3个 Tabasco Pepper
白芝麻 1大勺 1 Tbsp White Sesame
香辣红油 1.5大勺
赤砂糖 2小勺 (10g)2 Tsp Brown Sugar
糙米醋 1大勺 1 Tbsp Brown Rice Vinegar
生抽 2大勺 2 Tbsp Soy Sauce
花椒油 1小勺 1 Tsp Sichuan Peppercorn Oil
盐 1/4小勺 1/4 Tsp Salt
Tips:
我们这边的做法味型偏荔枝味,折耳根要微甜才好吃,同时带有一点酸味,我用的米醋酸味要弱一些,如果用陈醋需要再加点糖,味道可以少量加调整到自己满意
The flavor of this dish towards lychee note. You should taste slight sweet with a bit sour note. The rice vinegar I uses is less acid than black vinegar. adjust the sweetness with sugar as needed.
