● Ice cream is a must in summer! But thinking about using an ice cream machine is still too troublesome. After all, it may not be necessary to buy an ice cream machine. Most of the time, it is left on hold and it takes up storage space in the kitchen, which is a bit unsuitable. .
●Some time ago, my friend asked if there is a vegan ice cream with relatively low calories. Haha, I made this. The mangoes now are very delicious, the ripe mangoes are very sweet, so there is no extra sugar needed in the whole recipe, and the natural sweetness of the date is used to add some caramel flavor. The cream part is substitute with coconut milk/cream, the most important thing is that it is all natural ingredients.

●夏天自然少不了冰淇淋啦!但想着都要用冰淇淋机还是会觉得太麻烦,毕竟买一台冰淇淋机可能也用不了几次,大多数时间都是搁置着,还占了厨房的储物空间,实属有点不太合适。
●前段时间朋友问有没有一款健康热量又相对较低的冰淇淋。哈哈,我这就做出来了,最近的芒果特别好吃,熟透的芒果很甜,所以整个食谱里都没有加糖,而又利用椰枣天然的甜味增加一些焦糖口味,相比市面上糖和添加剂超多的冰淇淋简直太友好了有木有?奶油部分用了椰浆来打发,味道一样浓郁好吃,最主要是都是天然食材,咱多吃一些也没啥负担不是

Ingredients/材料:

●食材:
冷冻芒果肉 500g(选择熟透的会更甜)Frozen Mango Pulp 500g (Choose a well-ripe one)
全脂椰浆 2罐(我用的丽尔泰)2 cans full-fat coconut milk
皇冠椰枣 50g(皇冠椰枣相对有其它椰枣质地更软糯,更容易打碎)DATE CROWN 50g (Compared with other dates, the Crown date has a softer texture and is easier to break)
黄豆粉 2大匙 2 tbsp soy flour
原味花生酱 2大匙 2 tbsp peanut butter

●步骤/Steps:
1.芒果肉冷冻一夜,椰浆冷藏一夜,然后将椰枣泡热水10分钟去核,一起加入料理机打碎。
Freeze the mango meat overnight, refrigerate the coconut milk overnight, then soak the date in hot water for 10 minutes, then remove the pits, and add everything to food processor to break them.

2.椰浆只取顶部凝固部分,下面剩的水不用,可以用来做其他用途,然后用打蛋器打发到成型,底部要垫上冰块,保持室温不要太高,我是开着空调做的,否则容易融化。
I used the solidified part of coconut milk ,the remaining coconut water can be used for other purposes. Beat the coconut cream solid with a whisk until it is formed. The bowl should be covered with ice and make sure the room temperature is not too high. I turned on the air conditioner while making it, otherwise it will easily melt.

3.将1和2混合,然后加入花生酱和黄豆粉,用打蛋器混合均匀。
Mix 1 and 2, then add peanut butter and soy flour, mix well with a whisk.

4.准备一个金属容器比较好,提前放冰箱冷冻几小时,这样把冰淇淋液倒入会更快凝结从而不会形成太多冰渣。
It is better to pre-freeze a metal container a few hours in advance, so that the ice cream liquid will freeze faster and not form too much ice.

5.顶部盖上保鲜膜防止冰渣凝结于表面,放冰箱冷冻5小时,中途拿出来搅拌2-3次以混入更多空气从而阻止形成冰渣,次数越多冰淇淋就越蓬松。
Cover the top with plastic wrap to prevent ice foaming on the surface, put it in the refrigerator for 5 hours, take it out and stir it for 2-3 times to mix in more air and prevent the formation of ice . The more times the mix, the more fluffy the ice cream.

●TIPS:
1.如果冰淇淋冻太硬不用担心,拿出来回温10分钟左右即可。
2.如果想偷懒不用做奶油部分也很好吃哦!
3.黄豆粉做法:干黄豆洗净,放入烤盘铺平,烤箱150度预热后烤30分钟左右取出放凉后用磨粉机磨碎。
●TIPS:
1. If the ice cream is too hard, don't worry, just take it out and warm it up for about 10 minutes.
2. If you want to be lazy, skip the coconut cream part and it's delicious too!
3. Soybean flour method: Wash the dried soybeans, put them in a baking tray, and bake them for about 30 minutes after at 150 degrees Celsius in oven. Take them out and let them cool and grind them with a flour mill.
