「素食」无奶芝士 还能拉丝 |【Vegan】 Dairy Free Vegan Cheese

这款芝士不用发酵,利用营养酵母可以做出类似芝士的味道,营养酵母是国外常用于素食烹饪的食品,有一点点芝士的味道,因为芝士是发酵产品,我在里面加入发酵的味噌和苹果醋以增加发酵的味道,再加上日本糯米年糕的延展性来表现芝士的质地,成品就更接近芝士的感觉了,用来替代奶版的芝士真的很棒!
This vegan cheese does not need to be fermented, and the nutritional yeast can be used in this dish to bring the cheese flavor. Since the cheese is a fermented product, I added miso and apple cider vinegar to add a fermentation note. Mochi(Japanese Rice Cake) is added to imitate the texture cheese. When heated, it can melt perfectly.

Ingredients/材料:

日本年糕 200g(是一种拉丝的糯米年糕和中国年糕不太一样) Mochi(Japanese rice cake)200g
浓豆奶或其它植物奶 600ml(我是自己做的,所以浓度可以自己掌控,浓郁一些味道更好)Thick soy milk or other plant based milk 600ml
营养酵母 三大匙 Nutritional yeast 3 Tbsp
白味噌 一大匙 White miso 1Tbsp
海盐 ½小匙 Salt 1/2 Tsp
琼脂粉 8g Agar powder 8g
苹果醋 一大匙(或发酵类米醋 2大匙)Apple cider vinegar 1Tbsp (Or other fermented vinegar 2 Tbsp)
生腰果(浸泡后)130g Raw cashews (after soaking) 130g

Vegan Almond Parmesan Cheese Powder/巴旦木帕玛森芝士粉
生巴旦木 70g Raw almond wood 70g
营养酵母 两大匙 Nutritional yeast 2 Tbsp
椰蓉三大匙 Shredded coconut 3 Tbsp
海盐 ¼小匙 Salt 1/4 Tsp
