When I don't have time to cook, I usually make a big bowl of eggplant sauce, which is very good to match with Gaifan or noodles. I used firm tofu and mushrooms to simulate the meat texture. This vegan version is even better than the meat version. Why not give it a try!
没时间做饭时,我就喜欢做一大碗茄子酱,放在冰箱能吃好几顿,拌饭拌面都非常美味,这个纯素版本完全不输肉末版本,用老豆腐和香菇炒香味道和口感一样好吃,一定要试试!
Ingredients/食材:
茄子 1条 One Eggplant
老豆腐 150g Firm Tofu
香菇 几朵 Some Shiitake Mushrooms
胡萝卜 60g Carrot
生姜 4g Ginger
香菜 适量 Coriander
二荆条 1条 One Chili Pepper
调味料/Seasonings:
生抽 1大匙 1 Tbsp Soy Sauce
豆瓣酱 1大匙 1 Tbsp Doubanjiang
素蚝油 2小匙 2 Tsp Vegan Oyster Sauce
白胡椒粉 适量 White Pepper Powder
玉米淀粉 1小匙 1 Tsp Corn Starch
五香粉 ¼小匙 1/4 Tsp Five Spice Powder
赤砂糖 ½小匙 1/2 Tsp Brown Sugar
水 80ml Water
