
「素食」继土豆丝后,我发现藕丝卷饼才是王道!|【Vegan】 Breakfast Burritos With Lotus Root
We usually eat wrap/burritos with shredded potatoes for breakfast. I recent found out that lotus root is a very good alternative for potatoes. It's sweet and crispy. If you don't like shredded potatoes, why not give lotus root a try?
通常大家会用土豆丝做卷饼当做早餐,秋天的莲藕特别好吃,试着用它代替土豆丝做卷饼你一定不会失望,自带鲜甜爽脆,卷进卷饼里实在是美味至极,搭配一杯豆浆就是元气早餐。
📒Ingredients/材料:
莲藕 350g Lotus Root
胡萝卜 80g Carrot
青椒 2个 2 Green Pepper
姜丝 3g Shredded Ginger
香菇 1朵 One Shiitake Mushroom
📒饼皮/Wrap:
中筋面粉 300g All Purpose Flour
开水 75g Boiling Water
冷水 80g Cold Water
海盐 2g Salt
📒调味料/Seasonings:
生抽 1小匙 1 Tsp Soy Sauce
米醋 1大匙 1 Tbsp Rice Vinegar
白胡椒 ½小匙 1/2 Tsp White Pepper
海盐 适量 Salt
📒Tips:
1. The purpose of adding boiled water to the dough is to make the wrap softer and more elastic. I use half hot water and half cold water to make the wrap soft and chewy at the same time. You can also use dumpling wrap if you don't want to work with flour.
1.面团加入开水是为了让饼皮更柔软有弹性,加入一半就是半烫面,柔软的同时还带有嚼劲。不想和面也可以用饺子皮代替。
2. Rinse the shredded lotus root with water to remove excess starch, so that it will maintain the crispiness after cooked.
2.莲藕切丝后要冲一下水去除多余淀粉,这样炒出来耿爽脆
3. If you don't like the sour flavor of the dish, you can skip the vinegar.
3.加入米醋就是酸溜藕丝,不喜欢也可以不加
