I shared the toon leaves roasted pepper sauce recently. Today I will use it to make two simple dishes.
前两周给大家分享了香椿烧椒酱的做法,今天用它搭配两个简单的快手食谱,平时有小伙伴问能不能做一些容易上手的,我想这个应该算是吧!

Ingredients/材料:

🌟香椿烧椒酱/Toon Leaves Roasted Pepper Sauce::

香椿芽 一大把 Chinese Toon Sprouts
二荆条和螺丝椒 150g Green Chili Pepper
海盐 适量 Salt
熟芝麻 一大匙 Cooked Sesame
葵花籽油 约一杯 1 Cup Sunflower Oil

步骤/Steps:
1.椿芽去老根,焯水30秒过凉白开,放滤网滤干水分。
Remove the woody ends from the sprouts, blanch them in water for 30 seconds, let them cool, and put them on a strainer to drain the water.
2.锅不放油放辣椒煎出虎皮。
Fry the green chili.
3.辣椒和椿芽一起搅碎不用太碎。
Crush the peppers and the Chinese toon together.
4.混合后加入研磨的白芝麻和海盐搅拌均匀。
After mixing, add in the grounded white sesame and sea salt and stir well.
5.油烧到筷子下去立马冒泡的程度,约180度。
Heat the oil to reach smoking point for about 180 degrees Celsius (356 Fahrenheit).
6.离火后淋入食材中边搅拌,最后装入干净罐子上面用油覆盖。
Pour the oil into the ingredients and stir. Finally put it into a clean glass container and cover it with oil.


🌟香椿酱炒饭/Fried Rice with Toon Pepper Sauce:

胡萝卜、香菇、牛心白、隔夜炒米饭、生抽、海盐
Carrot, Shiitake Mushroom, Cabbage, Overnight Fried Rice, Light Soy Sauce, Sea Salt

🌟小番茄米线/Rice Noodles with Cherry Tomato Broth:

米线 一把 Rice Noodles
小番茄 250g Cherry Tomato
老豆腐 100g Firm Tofu
香菇两朵 2 Mushrooms
生姜 8g Ginger
昆布高汤块或其他高汤 400ml Vegetable Broth
清水 300ml Water

调味料/Seasonings:
生抽 一小匙 1Tsp Soy Sauce
海盐适量 Salt
白胡椒粉 一小匙 1Tsp White Pepper
五香粉 1/4小匙 1/4 Tsp Five Spice Powder
油辣子 一小匙 1 Tsp Chili Oil
香椿酱 一大匙 1 Tbsp Toon Leaves Roasted Pepper Sauce

TIPS:

1.在夏季还没到来前我会使用小番茄,南方温暖地区4-6月份就开始相继上市了,味道会特别鲜甜。
I used cherry tomato here, because it's the season here!
2.注意番茄汤里不要直接煮绿叶菜,否则汤会变得不好喝,绿叶菜也会变黄,特别是菠菜这种有涩味需要单独焯水。
Be careful not to cook green leafy vegetables directly in the tomato soup, otherwise the soup will have unpleasant tastes, and the green leafy vegetables will turn yellow, especially the spinach which has astringency and needs to be blanched separately.
