Pita Bread is actually very simple to make, and it doesn't require particularly complicated kneading and fermentation skills. In this episode, I will make pita from starch. I like to make sandwich with pita and tempeh balls for breakfast.
Tempeh is fermented beans. Its protein is easier to digest and absorbed without flatulence. It is a very high-quality vegetarian food.
皮塔饼别名口袋面包,制作起来其实非常简单,也不需要特别复杂的揉面和发酵技巧,只要按照步骤来成功率是极高的,我日常喜欢用口袋饼搭配天贝丸子当做早餐。可能很多人比较陌生,天贝是一种发酵豆类,相较于完整的豆类,它的蛋白质更容易消化吸收而不易胀气,是一款非常优质的素食食材
Ingredients/材料:
皮塔饼/Pita Bread:
高筋面粉 300g Bread Flour
海盐 2g Sea Salt
橄榄油 一大匙 1Tbsp Olive Oil
赤砂糖 一小匙 1Tsp Brown Sugar
35度 温水 220g Warm Water (35 Celsuis/95 Fahrenheit)
酵母 3g Yeast
天贝丸子/Tempeh Balls:
天贝 150g Tempeh
胡萝卜 一根 (250g) One Carrot (Approximately 250g)
盐和黑胡椒 适量 Salt and Black Pepper
生抽 一小匙 1Tsp Light Soy Sauce
五香粉 1/4小匙 1/4 Tsp Five Spice Powder
玉米淀粉 一大匙 1 Tbsp Cornstarch
荞麦面粉 三大匙 3 Tbsp Buckwheat Flour
香油 一小匙 1Tsp Sesame Oil
低卡豆腐美乃滋/Low-Calorie Tofu Mayo:
内酯豆腐 三大匙 3 Tbsp Soft Tofu (The Softer The Better)
柠檬汁 一大匙 1 Tbsp Lemon Juice
枫糖浆 两小匙 2 Tsp Maple Syrup
苹果醋 ½小匙 1/2 Tsp Apple Cider Vinegar
海盐和黑胡椒 少量 Salt and Black Pepper For Taste
橄榄油 2小匙 2 Tsp Olive Oil
TIPS:
1.锅子选厚一点的,一定要先预热然后再转中火不要太大容易糊,给皮塔饼一个膨胀的过程。
1. Choose a thicker pan. Be sure to preheat the pan and then turn to medium heat. It will give the pita a process of expansion.
2.一面定型后要多次翻面,耐心点,一般翻个4-5次就会鼓起来。
2. After one side is set, turn it over. Be patient and repeat for several times. Generally turn it for 4-5 times and the pocket will start to form.
3.发酵温度冬天会稍微久一点,以2倍大为准,可以丢发酵箱更快。
3. The fermentation will take longer in winter. Make sure the dough is 2 times in size, you can throw it into the fermentation box for faster fermentation.
4.烙好的饼要叠起来用厚布裹起来,不然会被风干,稍微温热放保鲜袋可冷冻保存一个月。
4. The baked pita should be wrapped with a thick cloth/food wrap/container, otherwise they will get dried. It can be stored in a ziploc in freezer, and it will last about a month.
5.顶部一有冒泡趋势就马上翻面,不要等泡冒完了,这时候就会破皮了。
5. As soon as the top starts bubbling, turn it over immediately. Don't wait for the bubble to get big, otherwise it will break the pita.
