It’s been a long time since I ate Lou mei . Today I made this vegetable version with rice cooker. The vegetables absorbed the flavor of the spices and chili sauce. It's a must-have for a friend gathering.
很久没有吃卤味了,今天做了这道素卤味,追剧或是聚会都非常适合的小吃,蔬菜吸收了香料的味道,加上调制的辣酱味道真的很丰富

Ingredients/材料:
藕片、土豆片、黑木耳、腐竹、千张、香菇、金针菇、海带
Lotus root slices, potato slices, black ear mushroom, yuba, tofu sheets, shiitake mushrooms, enoki mushrooms, kelp(seaweed)

调味料/Seasoning:八角2个、香叶2片、草果1个(去籽)、丁香6颗、山奈4颗、陈皮3g、小茴香3g、冰糖18g、肉桂1小块、豆蔻2个、干辣椒10个、生抽35g、老抽15g、海盐1小匙、清水900ml
2 star anise, 2 bay leaves, 1 black cardamom (de-seeded), 6 cloves, 4 kaempferia ginger, 3g tangerine peel, 3g cumin, 18g rock sugar, 1 small piece of cinnamon stick, 2 cardamom, 10 pcs of dried chili, 35g light soy sauce, 15g dark soy sauce, 1 tsp sea salt, 900ml water

蘸料/Dipping Sauce:芝麻酱2小匙、花生酱1小匙、香油1.5大匙、辣椒油4大匙、熟芝麻适量、花椒面适量、香醋1小匙、枫糖浆或糖1小匙
2 tsp sesame paste, 1 tsp peanut butter, 1.5 tbsp sesame oil, 4 tbsp chili oil, cooked sesame seeds, finely crushed sichuan pepperorn, 1 tsp black vinegar, 1 tsp maple syrup or sugar
