The vender told me, a noodles soup made with stir-fried potatoes and a little picked cowpea will surprise me, so I made it at home, and it turned out really good. I also added some seaweed to the soup base to make it even more delicious!
那天卖菜阿姨告诉我,土豆切片炒一炒煮面很鲜美,还一定要加点酸豆角说是很开胃,回家做了果然不错,汤底我加了点紫菜更鲜美了!

Ingredients/材料:
土豆 250g Potatoes
酸豆角 20g Pickled Cowpea
紫菜 一小块 A Small Pieces of Seaweed
香菜 2株 Coridander
生姜 4片 4 Slices of Ginger
龙须面 40g Thin Noodles

调味料/Seasonings:
生抽 1大匙 1 Tbsp Soy Sauce
竹盐 适量 Salt
香油 几滴 Sesame Oil
胡椒粉 1/4小匙 1/4 Tsp White Pepper Powder

Tips:
1. Stew the potatoes for a bit longer to make a more delicious soup base.
土豆多炖炖软烂一些汤会更鲜美
2.You can replace the pickled cowpea with any kind of pickled vegetables
没有酸豆角可以用类似雪菜、酸菜之类的代替
3.You don’t need to add too much noodles. Any types of noodles will do the job
面条不用加太多,用龙须面或者鲜切面都可以
