笼屉荞麦面是日本街头巷尾流行的面,夏天来一碗冰镇荞麦面,清凉爽口,无法抵挡。
煮面:开水中煮5分钟左右,取出后冷开水揉洗几遍,洗去淀粉及黏液
2人份酱汁:200克水、40克寿司酱油、30克味琳、10克,烧开盛出,放入冰箱冷藏
配料:芥末、上葱、七位辣椒等
食用的5个关键点
1- 煮好的荞麦面一定要冷开水揉洗去淀粉和粘液
2- 面不直接调味,蘸着酱汁食用
3- 食用时,夹起一口份的面,3/4部分蘸上酱汁,吸入口中
4- 其它的调料在食用的过程中逐步加入
5- 最后将煮面的原汤倒入剩余的酱汁中饮入
