双色紫薯馒头卷/小花卷,遇见紫色梦幻,一笼上桌,让人心动,赞美声中一抢而空。紫薯颜色,梦幻诱人,味道甘甜,做馒头可以不放糖,美颜瘦身开心面食。

白面团配方 White Dough Recipe (100:60:1:3)
中筋面粉 All-purpose Flour 300克
温水 Warm Water 180克
活性酵母 Yeast 3克
细砂糖 Sugar 10克

紫薯面团配方 Purple Sweet Potato Dough Recipe
紫薯泥 Mashed Purple Sweet Potato 200克
中筋面粉 All-purpose Flour 100克
活性酵母 Yeast 1克

制作步骤
1、200克紫薯一个,削皮切成小丁快,大火蒸20分钟,取出压烂成泥,制成200克紫薯泥
2、紫薯面团:紫薯泥中加入100克面粉和1克多酵母,揉成紫薯面团,静置发酵至1.5倍大 (大约1小时左右)
3、白面团:300克面粉中加温水180克、活性酵母3克、细砂糖10克,揉成面团,静置发酵成2倍大
4、发酵好的面团要充分的揉,到没有气泡很光滑就好了
4、各取出一块面团,擀成略微薄的长方形面片
5、两块面片叠放起来,沿一头紧紧地卷起来
6、均匀的切成大小一致4厘米宽的馒头卷,整形去掉两头
7、二次发酵30-45分钟左右
8、开水上锅大火蒸12分钟左右,停火
9、3分钟左右即可开锅食用


Steps

4. Take out a piece of dough and roll it into a slightly thin rectangular dough sheet
5. Stack the two dough sheets and roll them tightly along one end
6. Evenly cut into 4 cm wide steamed bun and remove both ends
7. The second fermentation is about 30-45 minutes
8. Steaming on high heat for about 12 minutes, stop the fire
9. Open the cover in 3 minutes.
