往年都是吃妈妈包的粽子,今年我这个粽子手残党,学习亲手包粽子。尽管万事开头难,经过不懈努力,成功已不是梦。尝试了三角粽、四角粽、圆锥粽的包法,并尝试了2种简单的粽子馅的配方,经验分享给大家。
材料:新鲜芦苇叶,干粽叶
馅料配方:
八宝馅:红豆40克、黑豆40克、腰豆40克、绿豆40克、黑糯米40克、花生40克、桂圆肉40克、大枣10粒、圆糯米500克。米和豆的比例为5:3
鲜肉馅:新鲜五花肉300克、圆糯米500克
肉馅调料:生抽1勺、料酒1勺、老抽1勺、蚝油1勺、腐乳1块,抓拌均匀,冰箱冷藏腌制3小时
糯米调料:糯米浸泡2小时后,加生抽1勺、老抽1勺、适量盐(根据自己的口味)拌匀,继续浸泡1小时即可
粽子包法:三角粽、四角粽、圆锥粽
I used to eat rice dumplings wrapped by my mother. This year, I learnt to make rice dumplings by myself. Although everything is difficult at the beginning, after unremitting efforts, success is no longer a dream. Tried triangular rice dumplings, four-cornered rice dumplings, and cone rice dumplings, with 2 simple recipes for filling rice dumplings. I am sharing my experience here with you.
Material: fresh reed leaves, dried zong leaves
Filling recipe:
Babao zong: 40 grams of red beans, 40 grams of black beans, 40 grams of kidney beans, 40 grams of mung beans, 40 grams of black glutinous rice, 40 grams of peanuts, 40 grams of longan meat, 10 jujubes, and 500 grams of round glutinous rice. The ratio of rice to beans is 5:3
Fresh minced meat: 300 grams of fresh pork belly, 500 grams of round glutinous rice
Minced meat seasoning: 1 scoop of light soy sauce, 1 scoop of cooking wine, 1 scoop of soy sauce, 1 scoop of oyster sauce, 1 piece of fermented bean curd, mix well, and marinate in the refrigerator for 3 hours
Glutinous rice seasoning: After soaking glutinous rice for 2 hours, add 1 spoon of light soy sauce, 1 spoon of dark soy sauce, and appropriate amount of salt (according to your taste), mix well, and continue to soak for 1 hour.
Zongzi packaging method: triangular rice dumplings, four-cornered rice dumplings, cone rice dumplings
