Aujourd'hui, on essaye ensemble de faire une recette de cookies... façon tarte aux pommes ! Avec sans surprise des pommes, de bonnes épices, et des ingrédients simples.
A few days ago we went to do the apple harvest and if you have already done
harvests you know that once you start it is difficult to stop and we have
therefore collected more than 4 kg of apples. So even though the apple is not a fruit that I carry
particularly in my heart, it is therefore time to try to make recipes to pass all
these apples before they are eaten by the fruit flies that swarm in our house.
I already have apple-based recipes on the blog, including an apple crumble and an apple pie
that I will put you in the link under the video in the description. But I especially made these desserts
for my companion because personally I'm really not a big
apple dessert fan. So I wanted to take the opportunity to make a new type of
video format where instead of testing recipes on my side to share them with you,
I directly test recipes in video. And we'll see at the end if it works or not.
I have technically already filmed a recipe test of cream and apple pie that I'm not
sure I'm going to post. And today we will continue in the apple theme with apple pie-shaped
cookies. So I'm going to try to really pimp this cookie recipe
so that it is good. If this recipe is a success, I will make you the article on the blog
with the quantities written so that you can make it again at home. Without transition, let's try
to make apple cookies. So obviously I'm not going to start making a super complicated recipe
where I know I'm going to need several tests. I'm going to base myself on recipes
that I know are a success. So I'm going to start on the base of my cookies in this way.
The recipe is already on YouTube and on my blog. And yes, I need to have the recipe
in front of me even if I created it. So we start with the margarine and there is not much
left in there. Then the sugar. Oops I put too much. So the brown sugar. So I'm going to put less.
And I mix the two, well the three. Then the lemon juice. And no I don't measure
because YOLO. A little vanilla. We mix again. And now what is really going to change
compared to my original cookie sebué recipe is that I'm going to add almond powder.
A good spoonful. A little tonka beans to really bring the almond flavor to my
cookie. I never know how much to put. We're going to say it's good. And of course I still put
cinnamon for the apple pie side. A good spoonful we will say. Do not be surprised if on the blog
it is different quantities that are written because there I make the recipe divided in two
since we are only two at home and that I am not sure that it works ideally. So when
I do a test I prefer to make smaller quantities. To my mixture of margarine, sugar,
seasoning, I will add flour to which I have already mixed baking soda,
sodium and salt. Yes all the ingredients are important but I will not explain it to you here.
If you need an explanation I really advise you to go see the video and read the
article on the cookie sebué. It will be much easier. It is better to always add not enough
than too much. So I started with 70 grams since I make the recipe divided in two
instead of 90 grams. And I know you're going to want to add liquid or that you're going
to tell yourself it's too much flour but trust me, keep mixing.
This is the type of dough you get, so really quite wet cookie dough. It must not be dry, it must not be too malleable to the hand in fact.
Here I take it, it does not stick but even if it sticks a little it is better than having a really too dry dough.
So all I have to do is add apple. I'm just going to use half an apple but I'm going to weigh it before cutting it
to know exactly how many apples I have. What I'm going to do is I'm going to make very small slices and therefore very small cubes with a knife.
And before I forget, know that there are 80 grams of apples. In the end I will start by putting 50 grams of apples and then I will see because I am afraid that it will be too much and that it will soak the dough a little too much.
I think 50 grams is clearly enough, so I think I have formed it on a plate and that there is more than to cook them. And we will taste.
On a simple baking tray with baking paper, I will use my ice cream scoop to make really equal-sized cookies.
I don't know if I've already told you, but I hate putting my hands in food.
As for the original cookies, you should not put the dough in the fridge before shaping the cookies to put them in the oven.
So that's six cookies and all that's left is to put them in the oven.
The cookies are cooked. I let them cook a little longer than the cookies were boiling because the humidity of the apple made them take longer to cook and they were really too soft when I took them out.
I'll show you one up close. So as you can see, they are quite soft in the middle, a bit like a cake almost.
And the fact that they are golden on the sides, it's more crispy on the sides. Technically, I could have cooked them a little longer to make them more crispy.
I'm going to stop blabbing and taste. No, in the end, I think the texture is really good.
What I did is that at about 8-9 minutes of cooking, I took them out and I tapped the plate against a wooden board so that the cookies would go down a little and not make a kind of cookie in the shape of a dome.
Because personally, I don't like that. And then I left them for a quarter of an hour so that they were really golden on the sides.
I'm going to be honest, I didn't think I would like them that much. I find them really very good.
One of you on Instagram asked me to give cookies recipes without chocolate. I think it's really the ideal recipe.
The cooked apple is hardly felt. I think it's the fact that I cut it into very small pieces. With a coffee.
I may hate the pumpkin spice latte or all the lattes with cinnamon in it, coffee, cinnamon. I think it's really not good.
Both really mixed together. But eating a cake or a cinnamon cookie while drinking a coffee, there is nothing more autumnal than that. It's really ultra, ultra good.
This recipe is really a success. So I'll be able to make a bigger batch, take pictures and put the recipe on my blog.
It will be in the description of the video just below. I hope you enjoyed this video.
In the future, I would like to make more videos where I really test recipes live in quotation marks.
In any case, in videos without preparation before. If you like this idea, do not hesitate to tell me in the comments.
And if you like my content, do not hesitate to put a blue thumb and subscribe to the channel. It really matters a lot to me.
See you next week for a new recipe. So in the meantime, I kiss you and see you soon.
