Super creamy sweet potato risotto from the thermomix in just 20 minutes.
Hi, it's Desi again from the MeinZauberTopf kitchen.
Not alone today, because we have Heike Henkel with us again.
Maybe you've already seen the first episode, but otherwise feel free to introduce yourself again.
Yes, I'd love to. So I was an athlete.
So my highlight was the 1992 Olympic victory in Barcelona.
And of course I know how important nutrition is, how important it is to take care of your health.
I have three children myself and know all phases of life.
And I've always been concerned with eating healthy.
And you even come from Kiel, where we're shooting again today, right?
Yes, right. I was born and raised here for a long time.
And I experienced my first Olympic Games as Heike from Kiel.
And yes, wonderful. I'm always happy to be here.
Very nice.
We're talking a little bit about nutrition and osteoporosis again today.
You're an expert in that.
But of course we're also cooking something really delicious, a sweet potato risotto.
You brought the recipe with you, because I think it's also quite good for osteoporosis, right?
Yes, there's a lot of calcium, healthy things in there.
And yes, I'm looking forward to it.
There's also a little bit of tofu, so vegetarian.
Or if you replace the cheese with yeast flakes, you can also eat vegan.
So something for everyone.
I would also say we'll start cooking right away.
And while the Thermomix is cooking our risotto,
thank God we don't have to stir all the time,
I can ask you a few more questions and you can tell us a little more,
because I think that's super exciting, of course.
And of course, you can find the complete recipe to read again at our Zaubertopf Club.
And you need the following ingredients.
Sweet potato, basil, risotto rice, tofu,
a little lemon zest and juice, salt and pepper,
a clove of garlic, a shallot, olive oil, a little almond,
parmesan, water and our vegetable spice paste.
I would also say we'll start right away.
How often do you cook at home?
Do you even have a lot of time for that?
Yes, if I'm not on the road right now, but actually almost every day.
My husband also likes to cook on the weekend.
Oh, you're good at it.
Yes, and I make sure to have fresh ingredients.
As I said, they also contain a lot of calcium, of course.
Parmesan is definitely a good supplier for calcium, right?
Absolutely, absolutely.
We're going to chop it up now, 10 seconds at level 10.
It's getting loud again, so better not talk now.
Now you can't hear you.
We'll need the parmesan later for our risotto,
which means I'm going to fill it up now.
If you haven't subscribed to our channel yet,
it's best to do it right now.
After 10 seconds, the parmesan is definitely really small.
I don't think you can do it in 10 seconds with a hand grater like this.
That's what I was just about to say.
And at some point you get a cramp in your hand.
Yes, that's right.
As I said, I'm going to fill it up.
If you don't want your risotto to burn later,
here's another little tip.
Rinse the mixing pot once
because there's always a little bit of cheese left under the knife.
We're not going to continue cooking now,
because we're going to make a basil gremolata.
Especially with the basil and almonds,
it's really calcium.
I think you told me that, didn't you?
Exactly.
But you told me earlier that not only calcium is important for osteoporosis,
but...
Yes, make sure to always pay attention to vitamin D
because calcium is better absorbed by the body,
absorbed by the bones.
But that means it's fat-soluble.
That means you always have to add a little bit of linseed oil or something like that.
I can still promote that,
but basically it's enough to make sure
that the two things are absorbed together
or absorbed.
Okay.
Good. I've already got the almonds in there.
Now I'm going to add the basil.
Then the lemon zest.
Of course, this is an untreated lemon.
And still always wash it off hot.
You can't hurt yourself.
I have to weigh a little bit of oil.
Oops, wrong side.
And I need another 30 grams of olive oil.
I've never cooked with a thermomix like this before.
I find it interesting.
You just weigh the oil.
You don't have to measure it beforehand.
It's very practical.
That's very practical.
Can you give me the pepper and the salt grinder?
I'd love to.
Very good.
And I actually have to taste it here for a moment.
What you can't see here is that my recipe is up here.
I have to look at the level.
I think 10 seconds on level 8.
That's fine too.
So, 10 seconds on 8.
Then it gets loud again.
And then I'll have a few more questions about osteoporosis.
We're going to fill that up now,
because that's going to be the topping on our risotto.
You could of course leave that out.
The pure sweet potato risotto is already so creamy
and would actually be enough as a main course.
But as I said, we're paying a little attention to the calcium requirement today.
And that's why we can always do a little more.
I think basil always smells so nice.
Again.
Yes.
Do you actually have another tip?
How often do you actually test your values at home?
Do you have to do it regularly?
Yes, when I noticed, when I did the test for the first time,
I first assumed that there was nothing to see.
You think as a former high-performance athlete,
I lived healthy, I did a lot of sports.
I was very surprised.
And then I had to supplement,
i.e. take dietary supplements, i.e. vitamin D and calcium.
And of course it was important after such a cure,
it takes about three months to see what happens in the body.
And I actually saw that it was improving,
but I was still not in the area where I should be.
And that's actually quite nice,
that you have a certain control.
You don't always have to take medication,
but for a while and then see what the value is.
So I always do that when I do this three-month cure.
I always checked what the value was.
And do you do that at home or do you always go to the doctor?
I can do that at home.
Quite simply with a urine test,
which I send directly to the laboratory.
This one here, right?
If I want to know a little more,
I can also have my blood taken.
That's what the doctor does.
And do you have any food that is particularly common on your table,
which is now perhaps much more than before?
Yes, I really like to eat parmesan.
That's very common on the program.
I make sure that I take nuts or almonds with me every now and then.
They have a little more calcium.
It's good that we used them today.
Unfortunately, I don't tolerate milk.
That's why I have to make sure that I take a certain yoghurt
or yoghurt substitute that contains calcium with me.
I just chop it up.
Five seconds on level five.
We don't need that anymore.
I just push it down with the spatula,
because it's going to be sautéed again
with a little olive oil.
I'm going to make the pimaldaum now.
I think there are about 20 grams in the recipe.
But always do it so nicely.
We'll need the rest for later.
Phew, that's hot.
For the tofu.
The whole thing is now sautéed for three minutes
at 120 degrees, level one.
If you have the TM31 at home,
then you take the Varoma button.
But you also tell yourself
that you always cook fresh at home, right?
Yes.
There used to be times,
especially as a high-performance athlete,
when I didn't always cook fresh.
But in the meantime,
it's just more fun
to go shopping.
It's part of it
to cook as fresh as possible.
Do you still do as much sport as you used to?
Of course not performance-oriented,
but I make sure that I stay in motion.
I go running twice a week
and once in a while
I do a little workout.
Depending on how much time I have.
But it's really
very easy on one level.
It's just about feeling good
and not more.
And you stay healthier automatically.
I always envy that, to be honest.
Because I'm so lazy in there
and I try that every time.
But I always sleep
five minutes longer, to be honest.
But you said you like to go for a walk.
So I still do 10,000 steps a day.
That's very good.
It's not that much of a sport, is it?
No, but at least movement.
There are more and more people
who prefer to lie down
than to go for a walk.
And that helps a lot.
And then at some point
you can get on your bike
and do a little bike ride.
I take it to heart.
Our onion and garlic
are now sautéed.
Now the risotto rice is added.
And now it's sautéed again
without a measuring cup
for three minutes
at 100 degrees.
And now it's important
that you press the left wheel.
That means it stirs with the blunt side
and no longer crumbles the rice.
And then on level 1.
You told me earlier
that in addition to nutrition
you also pay attention
to taking calcium with you
through mineral water, right?
Exactly. There are mineral waters
that contain more calcium
than others.
You can also pay attention to that.
In tap water, it's usually not that much.
But as I said,
there are very good mineral waters
that you can buy.
So you could probably just do it
in advance. It can't hurt, can it?
It can't hurt at all.
I always think that every reasonable person
should be checked regularly
by the doctor every two years at least.
And then you can see what's missing
or what's too much.
You should
pay attention to that
and check yourself.
So definitely not
take food supplements
without permission,
but always make an appointment with the doctor.
Right, I would always recommend it.
Because every person is different.
Everyone has different deficits
and you should really pay attention to that.
I think so too.
Do you have a tip for our viewers?
At what age should you
really get tested again?
I would actually recommend
from the age of 50.
Especially women,
because most of them
already go into the menopause.
And because hormones disappear,
it means that the bones
become more sensitive, more porous.
And I would definitely recommend
to talk to the doctor
about it
or just do such a test
and just keep it in the pharmacy
and, as I said,
just do it at home.
So I have to say,
I'm always very excited
when you can do such a nutrition change.
I found totally everyday recipes
with it.
It's really just about
paying attention to the nutrients,
vitamin D.
And are there any foods
that make it all the more beneficial?
In our case, you already said,
these are almonds, cheese,
sweet potatoes again, basil.
But are there any others?
Basically all dairy products.
Lentils,
rye fruits,
basically.
And in the shake
we made last time,
there are a lot of red berries in it.
It's also wonderful.
And you mentioned green vegetables, right?
Yes, everything that is green.
Broccoli,
raspberries,
everything is delicious.
Of course not everyone has the same taste,
but I think if you try it out,
if you deal with nutrition,
it's more fun and it tastes
really good.
And the nice thing is,
if you make the thermix at home
you have total control over what you eat.
Even if you can't cook that well
or something like that,
because you will be guided step by step
through the recipe
with our recipes from the club.
And of course you can read our recipe
at our Zaubertopf club
with all the steps,
so you don't forget anything.
Our risotto has to cook a little bit now.
I'll add the sweet potatoes now.
Then we have water.
Instead of water, you could also use a vegetable broth.
But we always have a homemade vegetable broth.
It doesn't contain any preservatives
or anything like that.
And it's made super fast in the thermomix.
Everyone should have it at home.
Then a little bit of salt
and pepper.
And then we have
a little bit of lemon juice here.
I'll just add a little bit
because we definitely don't have any alcohol
with us now.
And for the acid, we have the lemon juice.
And the whole thing
will simmer
for about 18 minutes.
The measuring cup comes on top again.
I'll just put it in.
Don't forget the left one.
We still want to have
potato cubes in there.
And just the softening level.
While the thermomix
stirs our risotto,
we'll take care of the tofu
about five minutes before the end.
We'll fry it again
really hot in the pan.
I'm already preheating the pan
because I said
about five minutes before the end of cooking time.
And we've switched places
because you're wearing a nice blouse
and you're not going to get splashed
with grease.
I prefer to put it in here.
I have to say
I'm not a big fan of tofu,
to be honest.
But if it's fried really hot,
I think I can eat it too.
It's also important
that it's well dipped
in the sauce.
But one thing has to be revised
with the tofu.
I once made tofu nuggets.
They were original like chicken McNuggets.
All the kids ate them before us.
I liked them too,
but they were also well marinated.
You just told me something
that's still important
that you should always check.
You can of course eat
wonderfully well and pay attention to it,
but you should also look
at the test.
You can't see it
with a normal blood test.
You can really see
what's in the bones.
What's really in there.
It's a new process
and it's wonderful.
Then you can always
check
if the nutrition is enough
or if you actually want to
take food supplements.
I think it's very important
because it's better
to determine in advance
how much is coming.
It's like
breaking a bone
when it's too late.
You can do something
through good nutrition
and through sport
in advance
so that it doesn't come that far.
In my case,
I'm in danger,
but I still have it in my hand
whether it's osteoporosis
or not.
I have all the possibilities
to prevent it.
How did you find out?
I got in touch
with Osteolab
and they offered me
to do this test.
I was curious
and thought that everything
would be wonderful
as a former Olympic athlete.
I was a bit surprised
if you don't expect it.
Exactly.
If you want to
read it in detail
because we cooked a lot
there is an infoblade
that you can get
for free
with 36 pages
where everything is explained
in detail.
I think it's very practical.
We'll link it in the info card.
Our risotto
is almost ready.
But for me it should be a bit browner.
I think so too.
Maybe you have to start
a bit more than 5 minutes before.
I'm curious
how it will taste.
I'm really looking forward
to cooking it.
If you haven't subscribed
to our channel yet,
do it right now
so you don't miss
a new episode.
All around the thermomix.
I'll turn it a bit
so that everything...
Ah, great.
If you touch it once,
it's off.
Can you take the lid off?
And fill up the risotto.
This is a typical meal for you
because it contains a lot of calcium
and vitamins.
I love risotto.
I love it too.
We eat it quite often.
And you can do a lot of variations.
I also like it very much
when you put a mozzarella on top
and then with a bit of pesto
and fried tomatoes
on top.
Good tip.
I have to try it.
Milk products are always good anyway.
Can I stir the cheese?
Yes, you can stir the cheese.
That looks pretty good.
You have to be more careful.
I probably gave you
the smallest bowl again.
You can fill it up nicely.
Very good.
Then I can add
a bit of our
gremolata on top
because that's also
a bit of semolina.
All right.
I don't like to eat in front of the camera
anyway.
I thought, okay,
that's a small pot,
you can't do too much,
but that's a good portion.
It's really for four people.
You can get a few full.
Yes, definitely.
Great.
I think it's great
that you were there
and answered so many questions.
I think our viewers were also interested.
I haven't really come into contact
with the topic yet,
but you can definitely pay attention to it.
I don't know if I'm going to do
such a test right now.
Imagine, it would be the same for me.
Yes, but better now than later.
Yes, probably.
Thank you very much
for letting me make this topic
public.
It's definitely important.
Enjoy your meal.
Let the risotto taste good.
If you cooked it,
definitely write in the comments
and if you also have osteoporosis,
I'll ask you again afterwards.
We'd love to answer
if we can.
See you next time.
It's definitely very hot now.
Yes, you have to be careful.
It's really delicious.
Also with the lemon note in there.
See you next time.
Bye.
