This Chocolate Hazelnut Torte combines the flavors of hazelnut and chocolate and has a soft, moist, almost pudding like texture. This torte is a classically dense, rich dessert. The darker the chocolate you use, the more intense it will be; I prefer 70% chocolate, though you could use 60% if you like. Excellent when served alone but if you want even more flavor, add some vanilla ice cream and berries. Hazelnuts and chocolate are wonderful together and are enjoyed around the world. Testament to their popularity is the fact that Nutella is enjoyed everywhere in the world a lot. Now, this is the perfect cake for a celebration or dinner party as it can be made several days in advance. In fact, it is better after a day or two when the flavors have had time to soften. This will definitely become a favorite. This cake serves 16 people.
Hi guys, welcome to Alice Yama Food.
Today I'm making a really really special cake. It's chocolate tarte
with hazelnut brittle underneath and some crunch with wafers.
It's really really delicious. It's so decadent and light.
Even though it's quite a rich cake it just feels really light and nice.
And today I'll be actually making my dinner party.
I really really hope you enjoy this recipe. And it's very very easy.
Just follow my steps by step directions and enjoy.
The first thing we're going to do, we're going to make
our almond hazelnut brittle and I've got a 12 inch pan so you can use
a smaller pan if you want, the cake will just come out a bit thicker.
So to save your time you can buy almonds already chopped up
for you in supermarkets and it just makes your life a bit easier
and we're just going to do the same thing with our hazelnuts,
now we're just going to put them into our food processor
and just blend until you get a nice smooth paste.
The next thing we're going to do is going to make actually our brittle
and all the ingredients will
be listed below and this is about four tablespoons
of water we place that into a pan and we add all
the sugar straight away and I put a pinch of salt in there as well
and all we're going to do we're
just going to wait till that starts to simmer
and bubble up and then we're going to add our butter
in there so once you see that the sugar
and water starts to bubble up we're just going to add butter
So, um...
pieces at a time just like that
So all we're going to do now is just wait till our butter melts and
we're going to wait till the mixture turns that beautiful amber colour.
Okay, so as you can see the colour turns from yellow
to golden straight away and we're just going to turn off the heat.
We're going to add the soda, mix that in.
And the next thing we're going to do,
we're just going to add all the almonds.
Really good mix like
that.
You can see straight away it's gone so nice.
Put this all in there, it's very very hot so just be very careful,
use the back of your spoon to spread the mixture evenly.
Once it's all done we're just going to put this into the fridge
for about half an hour until we make our filling.
The next thing we're going to do, I bought these wafers in my local
supermarket so you can get them anywhere, they're just really nice.
These are chocolate hazelnut flavour
and we're going to blend them again.
These will add extra crunch to the cake and it will be just delicious.
We take a large bowl.
And we're going to put all the mixed wafers in here,
we're going to add our hazelnuts that are being processed as well,
or in a food processor. And then we're going to add one can of caramel,
you can buy it ready in any supermarket.
And we just want to give it a really good mix
and mix it all throughout to make sure everything is incorporated.
Just like that, you can see it's really nice and spreadable.
So now we're going to add our hazelnut layer on top
and again we're just going to do the same thing we're going to try
and spread it around as equally as we can.
Okay, so just like that, and we're going to put it back
in the fridge to set for a good 15 to 20 minutes.
Now, to finish it off, we're going
to do a delicious devilish chocolate layer.
And I'm using 70% of dark chocolate.
It's a little glitch.
You can smell it's very, very rich.
We don't want to use milk chocolate
because it's got too much milk and sugar inside,
so it kind of loses that chocolatey taste.
And even with dark chocolate, you can't really feel that bitterness.
It's just so sweet and lovely.
So we start off by whisking two eggs.
Until they're nice and fluffy.
So the next thing we do,
we put our double cream into a small saucepan.
And we're gonna wait till it boils.
Once it starts to boil, we turn it off straight away.
Now this is really important to do it very, very slowly.
Because obviously we've got raw eggs and hot mixture.
If you put it all in together, you're gonna have scrambled eggs.
So we just add a little bit at a time.
And mix really,
really fast.
With everything mixed in, we add all the chocolate.
And we're just gonna leave it for 5 minutes until it melts.
I'm going
to mix that in.
So all we're going to do now, we're just going to pour that.
And this is our last step.
OK, so that's nice
and done.
That goes in the fridge for a couple of hours
until it's nice and set.
OK, so my cake is out of my fridge.
It's completely set.
If you can see, it's not juggling anymore.
And what I'm going to do with it, I'm
going to divide it into 12 portions.
Once you've got your cake, we're going
to decorate it really, really nicely with a bit of strawberry.
Open the cake really slowly.
There it is.
Again, my beautiful chocolate torte with nuts is done.
You can see all the three layers in the cake, it just looks amazing.
Anyone who loves nuts and chocolate,
this is the most amazing cake ever.
You can decorate it with some chocolate shavings or anything else.
I like to add fresh fruit
because it adds that extra freshness to the cake because it's
quite rich.
Guys, thank you so much for spending time in my kitchen
and please subscribe and I'll
see you all next week.
Bye!
