Coffee and walnut cake is the perfect party sponge- serve at afternoon tea, cake sales and birthdays. Mother's Day is coming up and its the perfect cake for your special ones. This classic coffee and walnut cake is topped with an easy espresso-infused butter-cream icing. This cake is a favorite of mine especially in the afternoon, but you can use decaf coffee if you are baking for children or anyone sensitive to caffeine. Its very easy to make and your mum will adore you for making special effort into making her this cake.
Hi guys, welcome to Alice's Yummy Food,
welcome to my channel and for some of you that haven't
subscribed to my channel yet, please do now.
I upload new videos every Sunday and my recipes
are just mouth-watering, you want to cook,
it's very very easy and I try and show you
step by step how to make the food.
Today I'll show you how to make one of my favourite cakes,
it's a coffee cake topped with vanilla and coffee buttercream.
It's just too good to be true.
I'm going to be using my stand mixer.
If you don't have that, you can just use an electric one.
So first thing we're going to do is put all our sugar into a bowl.
And then I'm using some oil. It's just a plain sunflower oil.
If you have butter, you can use that as well.
And we're just going to give it a good whisk for about one minute.
This is
optional.
I like to add
some walnuts
into the cake
mixture.
But if you're allergic to nuts, just don't use them at all.
All the nuts, all the flour without baking soda.
Okay, you can see my mixture is nice and beautiful.
It's that golden coffee color.
So I'm just going to distribute it into my pans.
I have lined two baking trays. These are 9 inches.
And put some parchment paper so it doesn't stick.
And we're just going to distribute it evenly.
Put these cakes
into a preheated oven
at 180 degrees or 350 Fahrenheit
for about 25 to 30 minutes.
I'm going to be making my coffee frosting,
so the first thing I'm going to do is whip
my double cream with some icing sugar
and a bit of vanilla extract, and we're going
to do it in a separate bowl, nice and whipped,
so we're just going to set it aside and start
doing our icing.
So I'm going to put my butter into our bowl,
and it's been at a room temperature so it's
very very soft, and we're just going
to cream it first until it's nice and white, and I'm
I'm going to add all my icing sugar.
And we're going to whisk it again for a couple of minutes.
Now that the icing is mixed in, we're just going to add our coffee.
And I'm using just an espresso shot.
And we're just going to whisk that again.
Once it's all mixed in, we're just going to add it to our double cream,
which is obviously whipped.
Incorporate all the ingredients together and mix it in.
And I'm going to put it back in the fridge for about half an hour.
So my cakes have been cooling down for about 20 minutes.
And now, I know they're not very thick, but I still want
to cut them in half because I want to make a four-layered cake.
So just gently mark where you're going to cut them.
Just go around and once you've gone around, just go through the middle.
I'm going to put this straight onto my decorative plate
and I've got my icing from the fridge.
It's nice and stiff and I'm just going
to put some icing in between each layers.
To finish it off,
I'm going to put my nuts
just around the cake
so each person gets a
slice with a nut and I've also blended some nuts as well,
just into a fine crumb with
With my hand blender.
Lastly, you don't have to do this,
but I've just melted some chocolate in the microwave.
I'm just going to drizzle it down,
just to make it look really beautiful.
I'm just going to decorate nicely on the plate.
Slice into a beautiful cake.
I hope you really enjoyed my video tutorial
on how to make this beautiful coffee cake.
I'm going to try it again and have a little try.
Quite late
So delicious.
