How to make buttermilk pancakes at home. Golden, fluffy buttermilk pancakes make the perfect Saturday morning breakfast. This simple recipe makes perfect pancakes easy enough to whip up any day of the week! We call them Oladushki. They are light and fluffy, and great with sour cream and jam. I have made these for years, and I hope you enjoy them as much as my family has. There’s a reason buttermilk is so often used in pancakes. The acid in the buttermilk kickstarts the baking soda into action for extra height. These are one of two types of pancakes known to Russian cuisine; they are the thicker ones. Instead of water, and to give a creamier consistency, you can use kefir, which is a sour milk product traditional to Russian cuisine. Oladushki are easy to prepare and are loved by households all around Russia.

Hey guys! Welcome to my channel Alice's Yummy Food
and in today's episode I'm going to show you how to make a Ladushki.
A Ladushki is a Russian type of pancake and it's very very famous.
I used to have them for breakfast all the time at home
when my mom and grandma used to make them for me and my sister.
And they're just basically puffed up pancakes made with kefir
or buttermilk. So let's get started!
This is a very quick recipe.
We basically put all our ingredients in a large bowl.
I will be listing all my ingredients just below.
So we put one egg,
sugar, kefir.
Just going to give it a quick whisk.
And now we're going
to add our flour.
I actually forgot to mention to put some soda in as well.
And once everything is incorporated,
we're going to leave the mixture for about 15 to 20 minutes aside.
Okay as you can see it's been 15 minutes
and you can see that the dough is a bit like got a lot of air in it
so I'm not going to touch it too much and it's ready to be fried.
So we take a large pan and we put about two tablespoons
of oil just to make sure it doesn't stick
and I like to use my brush to spread it around so it's all equal.
Pan is nice and hot you just place about a tablespoon maybe
a bit more if you like them bigger just like that.
We'll fry them until they're brown on both sides.
As you can see, they're really puffing up.
And I'm cooking them on a very,
very slow medium heat because I don't want to burn them.
And you can see that the air bubbles are up there.
And we're just going to keep them frying
and then flip them over in a bit.
Okay, they're ready to be flipped over.
They're nice and beautiful golden color.
Glue them together.
Beautiful.
It's starting to smell so delicious in the house.
My ladushki are done
and lastly I just like to sprinkle some icing sugar on top.
And of course you can serve them with honey,
with anything else but traditionally in Latvia we would
have it with some sour cream and some jam.
I've got some raspberry jam by hand but you can use
any jam, it works well.
So you just dip into sour cream and then cover it with some jam.
Yeah, mmm.
Okay, this is how I would eat it. It looks messy, but it's so good.
Wow, it takes me right back to my childhood.
You need to stop whatever you're doing now
and go make these, because these are so good.
Guys, really, really hope you enjoyed
this video. Thank you so much for watching.
I'll see you all next Sunday. These are perfect for brunch,
so surprise your family, friends, partners, and they will love you.
Bye!
